Recipe: Homemade Granola

So I came up with this recipe around 2 years ago. I love granola but hate the ones we get in the super market. Unless you pay a serious amount of money, you can purchase a decent box of granola. I began researching on how is it made and what is the rocket science behind it. After reading over a handful of recipes I realised its pretty damn simple.

dsc_1498-copyThis recipe has worked every single time I’ve tried to make granola. I have added and subtracted ingredients and the outcome has been the same. The best part about this recipe, apart from being super simple to make is that you can change the flavours at any point in time to keep it interesting. I have made mine a healthy version by using agave syrup and organic maple syrup but you could use brown sugar or even honey. Instead of butter and vegetable oil I used virgin coconut oil (also because I love coconut).

dsc_1513-copyOnce this is prepared, let it cool down and transfer to an air tight container (mason jar), leave in a dry spot in your kitchen and it can last for over 2 months (it never lasts in my house over a week if I have to be honest). This also makes for a lovely holiday edible gift idea. You could get creative and add whatever nuts and dried fruits you prefer. Which means you could customise this to your liking or the liking of the person you are gifting this to, if adding chocolate chips (which is not a bad idea), once the granola has cooled down completely toss it with the chocolate chips and store away. However it won’t stay crunchy for long as the moisture from the chips would attack it.

Recipe

Ingredients:

Flaked oats – 4 cups

Fresh coconut – 1 cup

Desiccated coconut – 1/2 cup

All Spice powder – 2 tbsp

Mixed Nuts (roughly chopped) – 2 cups

Mixed dry fruits (roughly chopped) – 1 1/2 cup

Salt – good pinch

Agave syrup & Maple syrup – 1 cup+3 tblsp

Coconut oil – 4 tblsp

Method:

  1. Preheat your oven to 180 C.
  2. In a large mixing bowl add all the dry ingredients and stir until combined.
  3. Add the honey and oil and mix well.
  4. Transfer to a lined baking tray and spread flat. Make sure to even it out before baking. Bake for 10 mins at 160 C, take out the tray and stir with a wooden spatula.
  5. Bake for 10 mins, take out and stir with the spatula again, add the dried fruit and bake for another 15 mins, stirring every 5 mins.
  6. Once done, switch off the oven and let it cool inside the oven. After its completely  cooled, transfer to an air tight glass jar.
  7. Serve with milk/yogurt/over ice cream, however you like it.
