Healthy Fluffy Banana Pancakes

Light and airy pancakes packed with bananas, oats and a few pantry ingredients that all get blended together. It is a no fuss recipe and does not require much from you to make them, serve it with your favorite fruits/accompaniments and enjoy this for breakfast, lunch or dinner.

Equipment

  • Blender
  • Tablespoons
  • Sauté pan
  • Metal spatula

Ingredients
  

  • 1 ½ cup Oats
  • 2 tsp Baking powder
  • ¼ tsp Salt
  • 1 tsp Vanilla
  • 2 Eggs medium
  • ½ cup Milk +3 tbsp
  • 2 Bananas medium

To Serve:

  • Mixed berries
  • Peanut butter
  • Honey
  • Sesame seeds

Instructions
 

  • In a blender add the oats and blend until it’s a powder. Add all the ingredients into the blender and blend for less than a minute.
  • Open the blender and using a spoon stir the batter together to help it blend smoothly.
  • Blend for another minute until all the ingredients are combined. Open the blender and stir to ensure no lumps.
  • In a sauté pan on low to medium heat and let it get hot for a few mins. Add a little oil and pour 3 tablespoons of the batter into the pan.
  • Cook for 2 mins until you see bubbles on the sides of the pancakes and they slowly start to emerge in the center as well. Using a flat spatula flip the pancake and leave to cook for close to a min until it has puffed up in the center.
  • Remove and serve with the toppings suggested or as you desire.

Notes

PRO TIP:
Flipping:
The best way to flip a pancake is with a flat metal spatula and with a swift confident move. Do not over think or worry while flipping.
Variations:
After you pour the batter into the sauté pan you can throw in some blueberries/chocolate chips/sliced bananas before you flip it to cook on the other side.
