  • 2 tbsp Coconut sugar
  • 150 gm Whole wheat flour
  • 50 gm Oat flour
  • 5 gm Corn flour
  • 50 gm Pecan nuts
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • Pinch of salt

Optional-

  • 1/2 tsp Cinnamon powder
  • 1/2 tsp Vanilla

  • Sliced bananas
  • Pineapples
  • Yogurt
  • Maple syrup
  • Pecans

Instructions

  • Mash the banana in a bowl, add the oil and sugar. Mix with a fork and add the milk. Stir.
  • Add all the dry ingredients and stir together until combined. Don’t over mix.
  • Spoon the batter into the waffle maker and cook for 1 min on medium heat on each side. If using an electric machine, it should take 3 mins in total. For crispy waffles, cook them a little longer.
  • Serve with fruit, yogurt, maple syrup, nuts, etc.

Notes

Do not over stir the batter as it needs to be a little lumpy for an fluffy and crispy waffle.
You can use 2 - 3 small bananas if you don’t have large ones near you.
Once you make the first waffle you will know how long it takes to cook in your electric machine or the regular waffle maker, so let the first one be a test before you make the rest of the batter.
