This series is my way of showcasing one ingredient in three different ways. They are everyday recipes that you can whip up easily. We learn how to cook mashed potatoes, potato salad and boxty aka potato pancakes.
Mashed Potatoes - Over boil the potatoes to help make it creamier. If you don’t have a food processor you could use any blender you have. Or just use a masher.
To make the mash more thick, reduce the milk mixture in the blending process.
Potato Salad - Do not over boil the potatoes as they will get smashed in the salad. I like to cut up the larger potatoes into halves. Do not over mix the salad. Mix it just before serving.
Boxty - Mix the batter well before cooking as all the ingredients need to be coated with the flour and buttermilk to hold its shape.
