If you are throwing out your leftover almond pulp, stop! Make this Almond Pulp Crunchy Granola instead that is so easy and simple to make, making for a delicious breakfast option.

Ingredients
2cupsRolled oats
2cupsNuts
1cupAlmond pulpor almond flour
1/2tspCinnamon powder
1tspVanilla
Pinchof salt
1/2cupMaple syrup
1/4cupOlive oil
Instructions
Preheat the oven to 180℃. In a a large mixing bowl add all the dry ingredients and stir around. Pour in the wet Ingredients and using your hand mix everything together until well combined and damp.
Transfer to a large baking tray and bake for 20 mins at 180℃. Remove from the oven and using a spatula gently stir the granola around (do not break it up too much if you like it chunky). Cook again for 15 mins until golden.
Remove from the oven and let it cool on the tray for a couple of hours until completely cooled down. Transfer to an air tight container and use as you would prefer.
Notes
Mix the mixture well before baking, ensuring all the dry ingredients are well coated.
Do not over bake the mixture. The granola will be soft when you take it out of the oven but that is fine as it will harden once it cools down.
You can add your dried fruit when you are serving the granola or after it has cooled down completely.
