Apple Crumble Galette (with almond cream)

Crunchy and flakey short crust pastry, layered with almond cream, apple slices, cinnamon and topped with a buttery crumble. Slice and serve it warm with a dusting of powdered sugar and a scoop of vanilla ice cream.

Even though we should be in pumpkin season I am still enjoying apple season. This apple crumble galette is the combination of an apple crumble muffin with apple pie and and almond torte. Seems like a lot is going but for the best possible reasons. If you want a straightforward galette recipe then check out this recipe. This galette is such treat and you can use reg or green apples but I like using red and not peeling them so that is one less step to prepare this recipe. The dough is my homemade short crust pastry recipe that is so flaky and needs only 4 ingredients to make but you can use any pastry you like.

I mean it is a crowd pleasing dessert but definitely worth a fall baking project if you are in the mood to get creative and enjoy baking season. You can store the leftovers in an air tight container in the fridge for up to 1 week alternatively I also like freezing the leftovers in zip lock bags for up to 1 months. When ready to eat make sure to reheat in the microwave until warm. Serve it with a scoop of vanilla ice cream or whipped cream. Alternatively you can also serve it with a dusting of icing sugar as well. So let us get to it. 

What is galette made of? What does galette mean?

Galette is a French dessert that is made with pastry and a filling. The pastry can be made with a short crust dough or puff pastry as well. The filling can be a fruit based or custard based filling. It is baked with an egg wash to make a delicious golden color on the top once done. Galette is a flat round cake/pastry often served with fruit, cream etc. 

What is the difference between a pie and a galette?

A pie most likely would be shaped and set in a pie dish or a tray while a galette is a free form tart that is shaped directly in the baking tray. Also pies most often than not have a covering while galettes don’t have to be closed on the top. 

What is apple crumble galette?

Apple crumble galette is basically an apple galette topped with a crunchy crumble. The galette is made with short crust pastry, almond cream, slices seasoned apples. The crumble is added on top before baking which makes it so yummy! It is the best solution for when you what to make a tart or pie but do not want the fuss. 

What ingredients do you need to make an apple crumble galette?

To make the dough we need butter, flour, ice cold water, salt. You can check out my homemade recipe here. For the apples we need red apples, corn flour, castor sugar, cinnamon, salt. For the almond cream we need almond flour, castor sugar, egg, butter, vanilla, almond extract, salt, corn flour. For the crumble we need flour, cashews, oats, butter, Demerara sugar, brown sugar. The galette is brushed with heavy cream.

 What equipment do you need to make an apple crumble galette?

Homemade short crust pastry can be made in the food processor or just use your hands and a large mixing bowl to bring it together. To slice the apples we need a shape knife and chopping board. I have used a large baking tray lined with baking paper to shape the galette. We need a rolling pin to roll out the dough. A brush to brush the pastry with cream before baking. The crumble and apples are mixed in separated bowls. 

How to make an apple crumble galette?

Preheat the oven to 180℃. Get a large baking tray that fits a 9 inch round cake tin and set it aside. For the apples – Peel, core and slice the apples thin, add the castor sugar, corn flour, cinnamon powder and salt. Mix and set aside. For  the almond cream – Beat the butter, sugar, vanilla, almond extract until smooth. Add the egg and beat again. Add the almond flour and beat until combined. We don’t want to add air but want to ensure the ingredients are well incorporated. For the crumble – Mix all the dry ingredients in a bowl and add the butter. Using your fingers mix the dry ingredients into the soft butter until clumpy and it has the consistency of wet sand.

For the pastry – Roll out the pastry dough between two sheets of baking paper until 1/4th inch thickness. Remove one sheet of baking paper and transfer the other sheet with the rolled out dough to baking a tray. Assembly – Spoon over the almond cream and spread it evenly, keeping a border of two fingers space. Add the sliced apples and trim off any excess dough. Fold the dough over on the apples and press down firmly. Add the crumble on top of the apples and press down a little making sure to cover the entire surface. Brush the outside of the dough with cream, sprinkle with almonds and sugar. Bake for 45 mins until the edges are golden and dry, the crumble has baked and the top has brown color. Slice and serve as you like.

Serving and storing an apple crumble galette?

Serve it warm with a scoop of vanilla ice cream or whipped cream. Alternatively you can also serve it with a dusting of icing sugar as well. Pair it with my apple pie latte and ouse got yourself an apple themed party! Ingredients
  

  • 1 all butter short crust pastry dough recipe
  • 2 tbsp heavy cream for brushing

Apples -

  • 3 red apples peeled, cored & sliced
  • 2 tbsp castor sugar
  • 2 tbsp corn flour
  • 2 tsp cinnamon powder
  • 1/2 tsp salt

Almond cream -

  • 4 tbsp butter room temperature
  • 3 tbsp castor sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 drop almond extract
  • 4 tbsp almond flour
  • 1 tbsp corn flour
  • Pinch of salt

Crumble -

  • 5 tbsp flour
  • 2 tbsp oats
  • 2 tbsp cashews
  • 3 tbsp demerara sugar
  • 2 tbsp brown sugar
  • 6 tbsp butter
  • Pinch of salt

Instructions
