Baked Salmon Sushi Cups (VIRAL Tiktok recipe)

This is an easy and simple baked sushi recipe to make at home for the perfect appetizer. It is packed with salmon, rice, cucumber, avocado and the most delicious coral sauce that pairs so well with the dish. 

When I saw this trend on tiktok I was unsure how to feel about it. I love sushi and felt it wrong to make the recipe like this with completely strips it off the essence, craft and art it takes to make sushi. Then I saw a couple of creators make the recipe and it looked so delicious that I caved. I followed a simple recipe that is a combination of many versions that I saw online but since making it the first time I have made it twice again as it was SO DELICIOUS!!

What are sushi cups?

Sushi cups are all the flavors and textures of sushi in one single bite baked in a mini cupcake tray. They are layered with nori sheets, jasmine rice, salmon and a delicious sweet spicy salty sauce, pickled cucumbers and avocado. They are easier to make and still tastes just as good as sushi.

Why is the sushi cups recipe viral on tiktok?

Sushi is not an easy dish to prepare at home as we need a few equipment and ingredient to make it authentically at home. This trend removes the fuss from the recipe and keeps the flavors which makes it very simple to prepare but also delicious and in this way you can make sushi at home all the time.

What ingredients do you need to make these baked salmon sushi cups?

To make this recipe we need salmon, cooked jasmine rice or sushi rice or any overcooked rice, sesame seeds, nori sheet. To make the sauce we need sriracha, kewpie mayonnaise, lime juice, soya sauce, sesame seed oil, brown sugar, chili oil, ginger garlic paste, rice vinegar. I have topped the sushi cups with pickled cucumber, green onion and avocado. You can also garnish with pickled ginger and fresh cilantro as well. 

What rice to use to make the sushi cups?

I have used leftover jasmine rice. You can use sushi rice or any leftover rice that is over cooked. Season the rice with a little soya sauce and rice vinegar. I have also made this recipe by making mini rice cakes, panfrying them. And then layering it in the tray before baking. The rice stays even more crispy and has a delicious crunch with every bite. 

For the sushi sauce –

This is my GO TO sushi sauce which is so simple to make but very delicious. We save some of the sauce to serve the the sushi later, but we add ginger garlic paste into the rest of the sauce to marinate and cook the salmon. It is a combination of sriracha, kewpie mayonnaise, chili oil, lime juice, soya sauce, sesame seed oil, brown sugar, ginger garlic paste, rice vinegar.

What equipment do you need to make these baked salmon sushi cups?

To make the sushi cups we need a mini cupcake tray to bake them in. For the salmon we need to cut it into tiny cubes on a chopping board and knife. I have mixed the sauce in a small mixing bowl and whisk. The sushi is baked and cooked in the oven. 

How to make these baked salmon sushi cups?

Preheat the oven to 180℃ and get a mini cupcake tray ready, set it aside. In a mixing bowl add the ingredients for the sauce and whisk until smooth. Remove 3 tbsp of the sauce in a bowl and set aside for later. Add the cubed salmon into the mixing bowl sauce and stir together, set aside to marinate for 5 minutes. Cut the nori sheets into small squares, line each cupcake tray with the nori sheet and a tablespoon of the cooked sushi rice. Repeat until all the moulds are filled. Top with the marinated salmon, sprinkle over the sesame seeds and bake for 10 minutes. In the mean time make a quick pickle by adding the chopped cucumber into a bowl with the rice vinegar and salt and set aside. Prepare the avocado and set aside. Once the salmon is baked, top with more of the sauce that we saved, the pickled cucumber, sliced green onion and the avocado. Serve it hot/warm.

Serving and strong these baked Salmond sushi cups?

The best way to serve it is with more sauce on top, extra pickled cucumbers, green onion and ginger as well. Alternatively serve it with soya sauce and wasabi too. A sprinkle or bonito flakes will also add more flavor and taste delicious. These are best served hot and warm I would not suggest serving them later.

Ingredients
  

For the salmon -

  • 300 g salmon fillet skinless, boneless, cut into cubes
  • 1 tbsp ginger garlic paste

For the sauce -

  • 2 tbsp kewpie mayo
  • 3 tbsp sriracha
  • 1 lime juice
  • 1 tsp sesame oil
  • 1 tbsp soya sauce
  • 2 tsp brown sugar
  • 1 tbsp chili oil

For the cups -

  • 24 pieces nori square sheets
  • 1 and 1/2 cup of cooked rice jasmine/sushi
  • 3 tbsp sesame seeds

For the pickled cucumbers -

  • 1 cucumber cut into small cubes
  • 2 tbsp rice vinegar
  • 1/2 tsp salt

Serve with -

  • Avocado soya sauce, green onion, wasabi

Instructions
 

  • Preheat the oven to 180℃ and get a mini cupcake tray ready, set it aside.

Notes

  • You can use any overcooked rice to make these sushi cups, I would recommend seasoning it with soya sauce, rice vinegar and salt to taste before portioning.
  • If salmon is not your choice then you can use tuna as well int he same way - however I prefer my tuna uncooked.
