Chocolate covered biscuits - Love Actually🎄

Christmas Movie Recipe Inspiration #8 with my go to snappy biscuit recipe but in true style of the Love Actually movie, we cover it in melted chocolate and a gentle sprinkle of sea salt flakes. They are perfect with tea.

Welcome to my brand new Christmas recipe series where I make foods/recipes from my favourite Christmas movies. We are on the eight movie recipe with Love Actually and Chocolate covered biscuits. If you missed the previous movies, check out them out in my recipes page. 

A Little Back Story To Christmas Movies…

Growing up I loved decorating the house in November for Christmas. Once it hit 15th November, my tree and lights were up, I might have taken time to put everything else up as the month progressed but the tree and lights set the mood and the vibes were in full swing. I would put off all the other lights in the house, in the evening and turn on the festive lights. Switch on my favorite Christmas movie and in those days we needed to have CD’s, which I must say I did. Not much has changed since. I get started with my Christmas movies the moment the tree and lights are up. As I’ve grown up, I have noticed the food scenes in these movies with more intent and honestly I love them so much it inspired me to recreate some of these recipes. Hence I am here at the brink of a new series and so excited to share my love for Christmas movies and their food scenes with you.

Chocolate covered biscuits & Love Actually?

The movie Love Actually is one movie that is filled with Christmas that covers very realistic stories of normal everyday characters played by huge movie stars. I love the film because of its relatability and realism. There is a scene in the film where Hugh Grant (who is playing the prime minister) wants the chocolate covered biscuits instead of the regular ones and that is all thanks to his secretary (Martine McCutcheon) who he falls in love with. I find the scene so simple but so impactful as it was these little things that got him to fall in love with her all through the movie. 

What are chocolate covered biscuits?

Honestly any biscuit you like can be dipped into melted chocolate and considered to be a chocolate covered biscuit. However this recipe is a simple wholemeal biscuit based that is snappy and crumbly once baked, spiced with vanilla and nutmeg to add to the festive flavors. Topped with melted dark chocolate. Now it is debatable on whether milk chocolate is better but I prefer the taste of dark chocolate. You could go with a marble of both but the biscuits must be covered in chocolate. 

What ingredients do you need to make these chocolate covered biscuits?

Biscuits –

To make these biscuits we need all purpose flour, whole wheat flour, icing sugar, butter, milk, nutmeg, vanilla, almond extract and salt. To make these vegan use a plant based butter and milk. If you are making these gluten free use a gluten free flour mix (cup for cup measure). You could add orange zest, finely chopped almonds or hazelnuts as well. 

Chocolate –

We need good quality dark chocolate I’ve used 60% dark chocolate, olive oil and a little sea salt flakes. 

What equipment do you need to make these chocolate covered biscuits?

To make the biscuit base I have used a mixing bowl and my hands to rub the ingredients together but you could use a sand mixer and a paddle attachment. Roll out the dough between two sheets of baking paper and a rolling pin, cut the dough with a wine glass or any round cutter and bake it in a tray in the oven. A cookie sheet also works here. I like using an offset spatula to transfer the cookies to a wire rack to cool once baked. The chocolate is melted in a bowl in the microwave. 

How to make these chocolate covered biscuits?

Preheat the oven to 180℃ and line a baking tray with baking paper, set aside. In a bowl add the all purpose flour, whole wheat flour, icing sugar, salt, nutmeg and mix together until combined. Add the cold butter and rub together until you have a damp sand like texture. Add the vanilla, milk and stir together with a spoon. Switch to your hands and mix until a dough has formed. Roll between two sheets of baking paper until 1/4 th inch thickness, remove one sheet of the baking paper and cut into rounds with a wine glass/circle cutters. Transfer the cut outs to the baking tray and bake for 9-10 mins until risen and lightly golden. Remove from the oven and transfer the biscuits to a wire rack to cool. In the mean time melt the chocolate in the microwave until smooth. Add olive oil and stir together. Once the biscuits have cooled down dip them into the melted chocolate. Place them in the fridge for 14-16 mins to firm up the chocolate before serving. 

How to serve and store these chocolate covered biscuits?

Once these biscuits are cooled, dip the top into the melted chocolate and let them set in the fridge for a couple of minutes before serving with a cup of hot English breakfast tea in classic Love Actually style. You could sandwich it between ice cream and make for the easiest ice cream sandwiches. If you are gifting these biscuits pack them in air tight tins or containers before shipping. They store well in air tight jars at room temperature for 10 days, in the fridge for over 2 weeks. I wouldn’t recommend freezing them as the chocolate will not defrost well.

Ingredients
  

Biscuits -

  • 1 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 3/4 cup icing sugar
  • 1/2 tsp salt
  • 1/2 cup cold butter cubed
  • 1/4 cup + 2 tbsp milk

Chocolate coating -

  • 1/2 cup dark chocolate
  • 1 tbsp olive oil
  • Sea salt flakes

Instructions
 

  • Preheat the oven to 180℃ and line a baking tray with baking paper, set aside.
  • In a bowl add the all purpose flour, whole wheat flour, icing sugar, salt, nutmeg and mix together until combined.
  • Add the cold butter and rub together until you have a damp sand like texture.
  • Add the vanilla, milk and stir together with a spoon. Switch to your hands and mix until a dough has formed.
  • Roll between two sheets of baking paper until 1/4 th inch thickness, remove one sheet of the baking paper and cut into rounds with a wine glass/circle cutters. Transfer the cut outs to the baking tray and bake for 14-16 mins until risen and lightly golden. Remove from the oven and transfer the biscuits to a wire rack to cool.
  • In the mean time melt the chocolate in the microwave until smooth. Add olive oil and stir together.
  • Once the biscuits have cooled down dip them into the melted chocolate. Place them in the fridge for 5-10 mins to firm up the chocolate before serving.

Notes

  • Do not over bake these biscuits as they will firm up as they cool down and get snappy.
  • Dipping the biscuits is not an option, these biscuits taste better with it.
