Fudge chocolate brownies that are rich, chewy and rich. Topped with a layer of fresh strawberries and a silky smooth chocolate ganache to make for the easiest chocolate covered strawberry brownies. They look so pretty and taste delicious.
Okay I need to confess, I made this recipe for valentines day and life slapped me hard that I forgot to share it with you. Now that we are in spring summer season and I have been seeing strawberries everywhere I somehow remembered I am sitting on this master piece of a recipe and believe me I felt guilty for not sharing it sooner. So here we are with me trying to type as fast as possible so it is our there for you to enjoy.
The recipe is my favorite chocolate fudge brownie recipe that is a simple but effective one. It is so delicious, rich and decadent. You do not need any fancy ingredients to make before you think of using a box brownie mix 9nothing abasing them), just try this out. Please. We then layer the baked brownie with fresh strawberries in a single even layer. It is topped with a semi sweet chocolate ganache and set until the top is firm. They are truly delicious and the perfect chocolate covered strawberry but think brownies.
Also, I must admit I think chocolate covered strawberries can be overrated sometimes, we pay an arm and leg for them if you are buying them from outside. Tempering the chocolate is not easy and without that it is difficult for the outer chocolate to set easily. Hence don’t make them and bake these brownies instead. Cut them up into squares and enjoy with a glass of milk, they are so delightful and very delicious. Not to mention they look so pretty. So let us get to it.
Chocolate covered strawberries basically strawberries on a skewer that are covered in melted chocolate. The chocolate can be a combination of milk, white or dark. The chocolate has to be tempered in order for it to set properly and the strawberries need to washed and wiped clean or else the chocolate won’t stick to it. They are chill and eaten. We have taken those flavors and set them on a fudge brownie. Considering brownies with melted chocolate and strawberries are delicious anyway.
To make the brownie layer – we need eggs, brown sugar, white sugar, butter, dark chocolate, flour, cocoa powder, vanilla, salt. To make the strawberry covered chocolate layer – fresh strawberries, whipping cream, dark chocolate, honey, coffee.
To make the brownies we need a couple of mixing bowls, an electric beater, rubber spatula and an 8×8 inch square tin lined with baking paper. The brownies are baked in the oven. We need a knife to cut the strawberries into halves. The ganache is made my heating the cream in a sauce pot over the stove. The brownies are layered in the same tin, cut them with a sharp knife once they have chilled.
Preheat the oven to 180℃, line an 8×8 inch tin with baking paper and set aside. In a small mixing bowl add the butter and chocolate, heat in the microwave until melted. This took me around 1 minute, stirring every 20 seconds. Allow it to cool and set aside for now. In a larger mixing bowl add the eggs, sugars and vanilla, beat until pale, creamy and doubled in volume. This will take around 3-4 minutes (you can do this with a whisk as well). Add the cooled melted chocolate mixture into the eggs and whisk together. Add the flour, cocoa powder, salt and using a rubber spatula fold the dry ingredients into it. Pour the batter into the lined tin and bake for 22-25 minutes until the top is glossy and the inside is still soft, jam like consistency with a tooth pick test. Allow the brownies to cool a little while we make the icing: in a sauce pot add the cream and instant coffee, bring to a simmer. Take it off the heat and add the chocolate, honey and let it sit for a few minutes. Gently start stirring it together until combined, let it cool for 10 minutes. In the mean time let us layer the cooled brownies with our halved strawberries in an even layer. Pour the slightly cooled ganache over the brownies, allow it to cool and set (around 2-3 hours at room temperature or in the fridge for 1 hour). They must cool down completely before slicing and serving.
These are best served chilled with a glass of milk but you could also serve them with vanilla ice cream or whipped cream too. The brownies are rich so I would recommend one piece is good enough however I have eaten 3 in one go, though I am not the example to set here.
The leftovers can be transferred to an air tight container and has to be stored in the fridge as the strawberries are fresh. They will keep for 3-4 days in the fridge. They will not freeze well hence I wouldn’t suggest storing them in the freezer.
