Chocolate fudge brownies studded with mini eggs, creme eggs and all the easter themed candy. Topped with a rich and indulgent dark chocolate ganache and even more chocolate eggs. The easiest and tastiest dessert to bake for easter.
I love a good brownie. I have made so many recipes and variations over the years the past years which you can find in the recipes section but honestly nothing beats a simple, classic fudge brownie. This recipe is a delicious cosmic brownie recipe that is very easy to prepare but also perfect for the easter season coming up as it includes all the possible easter chocolate you can think of. If you are not purchasing any easter chocolate or do not have any leftover in your kitchen then you can use regular chopped chocolate in the brownie batter or just leave it out as well. So let us get to the recipe.
A cosmic brownie is a chewy and fudgy brownie topped with chocolatey icing then sprinkled with colorful candy-coated (sprinkle like) pieces to make it the perfect sweet treat. They are usually made with flour, cocoa powder, salt, butter, chocolate, eggs, sugar and then ganache is made with cream and chocolate – so what is not to like? They so indulgent and delicious with a glass of milk.
Easter cosmic brownies are basically a rich, intensely delicious, fudge chocolate brownie made with Easter chocolate to turn a classic and basic recipe into this seasonal dessert that is perfect to feed your family and friends. Not to mention a yummy treat to have on hand during all your easter celebrations.
To make these brownies we need butter, dark chocolate, eggs, sugar, vanilla, flour, cocoa powder, salt. For the ganache I have used whipping cream and dark chocolate with a little honey. instead of decorating with rainbow candy I have used easter chocolate such as creme eggs, mini chocolate eggs, malteseres, smarties and mini creme eggs as well. You could just leave them out but then they won’t be easter themed brownies.
To make the brownies we need a mixing bowl, electric whisk and rubber spatula. I have baked the brownies in an 8×8 inch square tin lined with baking paper. The ganache is made in a bowl in the microwave. I like to use a sharp knife to cut the brownies once they are set.
A good brownie is fudgy because of the ingredients quantities and preparation. Wee need a high ratio of fat with sugar and lower amount of dry ingredients. Along with this we beat allot of air into the eggs and sugar which helps while the batter is baking, making a shiny crust on top and a fudge interior.
Preheat the oven to 180℃, line an 8×8 inch tin with baking paper and set aside. In a small mixing bowl add the butter and chocolate, heat in the microwave until melted. This took me around 1 minute, stirring every 20 seconds. Allow it to cool and set aside for now. In a larger mixing bowl add the eggs, sugars and vanilla, beat until pale, creamy and doubled in volume. This will take around 3-4 minutes (you can do this with a whisk as well). Add the cooled melted chocolate mixture into the eggs and whisk together. Add the flour, cocoa powder, salt and using a rubber spatula fold the dry ingredients, chopped easter chocolate into it. Pour the batter into the lined tin and bake for 22-25 minutes until the top is glossy and the inside is still soft, jam like consistency with a tooth pick test.
Allow the brownies to cool a little while we make the icing: in a sauce pot add the cream and bring too a simmer. Take it off the heat and add the chocolate, honey and let it sit for a few minutes. Gently start stirring it together. Pour over the warm brownies, stud the top with the extra creme eggs and easter chocolate. Sprinkle over the sea salt flakes. Allow it to cool and set (around 2-3 hours at room temperature or in the fridge for 1 hour). Cut into squares and serve with milk.
These brownies are best served with a glass of milk. They are so fudgy and indulgent you will need a little drink to wash it down. The chocolate is intense but so good. I also love it with a cup of black coffee. It isa yummy dessert that does not need any ice cream or whipped cream as the frosting is rich enough. These brownies are also delicious on its own without the frosting if you are someone who hates icing then you can totally avoid it but keep in mind a classic cosmic brownie calls for a frosting on top.
The leftovers can be stored in air tight containers at room temperature for a couple of days or in the fridge for 7 days. You could also freeze them but the texture is not entirely the same after defrosting. They pack really well and you can store pack them up as edible gifts as well.
