It has been months but this trend doesn’t seem to calm down and I am here for it. The combination of flavors and textures are elite and unlike another! With Eid round the corner I made a Chocolate cake with pistachio kunafa filling and buttercream to fix all those celebration dessert cravings. In saying, I didn’t stop there, I mean why would I? Meet my croissant, stuffed with pistachio frangipani, the classic crunchy kunafa pistachio paste filling which is topped with melted chocolate and pistachio cream with more crunchy kunafa. Like IT DOES NOT GET BETTER THAN THIS.
So I must admit that I made this recipe as I had a few croissants in the freezer that needed to be used up and also some of the crunchy kunafa pistachio paste filling that was leftover from the cake. I didn’t want to let it go to waste, so making this seemed only fitting. Also, hello to the most indulgent tea snack and if you were looking for a way to upgrade your croissants, then this is it. Before we get into the recipe let us first get through, what the hell these VIRAL chocolate pistachio bars are.
FIX dessert is a dessert bar that sells delicious sweet treats based in Dubai. They have a variety of chocolate bars that are not your everyday candy bars they are packed with a variety of flavors and textures to create the most delicious dessert bar.
A creator on tiktok posted these chocolate bars which went viral and very soon people who travelled to Dubai and those to lived here wanted to get their hands on these dessert bars. They are simply yummy with the right amount of chocolate to filling ratio. Also they are huge in size, in comparison to the regular candy bars.
As of now they don’t sell outside Dubai. Many people suggested you can find them at the airport but you cannot. The only way to get your hands on these bars is by purchasing them through the delivery app.
These dessert bars are chocolate bars filled with a variety of flavors but the most popular one is the pistachio kunafa filling which is crunchy and very. Yummy.
They are store bought croissants that are filled with a pistachio frangipani, a crunchy kunafa pistachio paste filling and baked until golden. They are topped with melted chocolate, more kunafa filling and a pistachio buttercream. A few toasted pistachios here and there as well.
frangipani is essentially almond cream made of almond flour, eggs, butter, sugar to create an almond paste like consistency which is used to make almond croissants and many other pastries and desserts. I have used it to make my almond croissant bread pudding, galette des rois, almond croissant blondie bars and a few more. I have used the same concept here but just swapped the almond flour for pistachio flour which is basically pistachios ground into a powder. Once baked it is packed with pistachio flavor and very fragrant, not to mention delicious.
Kunafa is a popular middle easter pastry used in a variety of sweet and savory recipes. It is also known as Kunafeh/ kataifi/ Kunafa/ Kanafeh/ Knafeh/ Konafi/ Kunaftah/ Künefe/ Kinafa. Yup, it is referred to differently in different regions all over the world also depending on what it is used for. It is a pastry that is thin like angel hair, which can be fried, sautéed or baked until golden. It have a crunchy texture once cooked. If you use it in puddings it will get soft and have cooked pasta like texture.
This crunchy filling is what you find inside the viral chocolate bar recipe, which basically consists of toasted kunafa pastry, pistachio paste and tahini. Once the kunafa is cut into tiny pieces it is toasted in butter over the stove until golden brown – this ensures that crunchy texture. So do not skip this step. Stir it with the pistachio paste and tahini once the kunafa has cooled down a little.
To make this recipe we need store bought croissants, pistachio frangipani filling, melted chocolate, pistachio buttercream, pistachio kunafa filling and more pistachios cause why not.
Pistachio powder (pistachio nuts ground into a powder), butter, castor sugar, egg and a little vanilla. I also like adding a 1 tbsp of cornflour to make it extra fluffy.
We need kunafa pastry, pistachio paste/pistachio nut butter, tahini (aka sesame seed paste).
Pistachio paste, butter, almond extract, tahini, icing sugar.
Melted chocolate (a combination of milk and dark chocolate), pistachios and sea salt flakes.
I use a bread knife to slice the croissants. To make the frangipani we need a whisk and mixing bow. I use a spoon to fill the croissants. To make the kunafa filling we need a knife to cut the kunafa and a sauté pan to toast it, we need a bowl to mix it with the paste. I bake these on croissants on a lined baking sheet tray in the oven. The chocolate is melted in the microwave but you can use a double boiler or what you feel comfortable doing. Use a spoon to cover the top with the melted chocolate. The butter cream needs bowl and whisk, I have piped it over the croissant but you can spread it with butter knife as well.
Preheat the oven to 180℃, line a baking tray with baking paper and slice your croissants into half, set aside. To make the pistachio frangipani – in a mixing bowl add the butter and beat until pale. Add the sugar, vanilla and beat again. Add the egg and beat until combined. Add the pistachio flour, corn flour, sea salt and whisk until smooth. Set aside until ready to use. To make the kunafa filling – cut the kunafa pastry into tiny pieces and toast in a large sauté pan on low to medium heat (stirring constantly). Once it is golden brown and crunchy take it off the heat and transfer to a mixing bowl. Add the pistachio paste, tahini and gently stir together. Baking the croissants – fill each croissant with 3 tbsp of the frangipani filling and top with 2 tbsp of the kunafa filling. Close the croissants and top them with 1 tbsp of the frangipani filling. Bake them for 15-18 minutes until the croissants are golden, the frangipani has cooked and has color. To make the pistachio buttercream – while the croissants bake, let us make the buttercream. In a bowl add the ingredients and blend until smooth. Transfer to a piping bag or a zip lock bag as well and place in the fridge until needed. Garnishes – melt the dark and milk chocolate in a bowl in the microwave at 10 seconds intervals, stirring between each interval until smooth. Toast the pistachio nuts and chop roughly, set aside.
Once the croissants are baked, if the frangipani has oozed out you can cut off the excess with a knife or leave it for a more rustic look. We top it with the melted chocolate – this can be done two ways, either the whole croissant on top is covered in melted chocolate or just half the croissant. Pipe on the pistachio buttercream and finish with the remaining kunafa filling. Top with pistachios and sea salt flakes. Enjoy with coffee.
The croissants can be stored in air tight containers in the fridge for 2-3 days. When ready to eat allow it to come to room temperature, if it is topped with the chocolate and pistachio buttercream it is not advisable to reheat it as it will melt out and the buttercream will split. Eat it at room temperature.
