I tested the top rated hot cross buns on google to find out the best recipe to bake for Easter. This traditional baked bread is a buttery soft dough that is rich in mixed dry fruit, eggs, milk and topped with crosses.
If you are new here you must not know that I absolutely LOVE hot cross buns. I have made so many recipes over the years and they are so treasured in my home. We make them during easter all the time and they are so simple but so delicious. I have a recipe that says WORLDS best hot cross buns and the reason I say this is because they are so simple and so good. Honestly the easiest recipe you will bake but also the yummiest recipe you will eat. However if I say this it must mean I know what I am talking about – which means I would’ve had to try many other recipes before proclaiming mine to be the best.
There is a creator by the name of Pancakeprincess who tests out many recipes of the same dish to find out the best one and it inspired me to try out some of the most popular hot cross bun recipes on the internet to find out which is the best one. Now there are some serious contenders on the top 8 recipes to test out and I couldn’t obviously put in everyone that I have tried before.
Before we get into more details about hot cross buns, let me introduce you to them. Hot cross buns mark the end of the Christian season of lent. The bun itself has many meanings depending on the country you come from. Some say the cross depicts the crucifixion of Jesus, while the spices inside signify the spices used to embalm him during the burial. There are many stories on why it signifies however we will not get into every story/belief.

Now, I shortlisted these 8 hot cross bun recipes based on a few factors: taste, texture, ease, ingredients and google rating. Hence when I tasted all 8 of them they were judged on this criteria. Also, let me introduce you to the biggest critic of them all – my mother. Little back story on why I was keen to do this testing and how it holds a special space in my heart. Back home in Bombay, mum and I would buy hot cross buns from all the bakeries near our house and do a tasting with butter and sugar, dip dip in coffee. The easter season turned into a ritual for us which made this the best time for us to act like chefs and rate all these buns. Having moved to dubai we don’t do this any more but I thought this little recipe test would bring back those memories and it did just that.
While I enjoyed baking all these recipes from start to finish there were clear stand out winners and then there were some which didn’t hit the mark for mum and I. Having said this, they all baked up beautifully and the recipes are stellar so if you do want to give them a go please do and make sure to follow the recipe as recommended to achieve the final product as close to perfection as possible. Let us break it down to understand the overall process and final outcome a little better.
For the most part all the recipes needed soaked dried raisins/mixed fruit. While some recipes require it to be soaked in warm water others recommend juice and a couple suggested soaking them in brandy or alcohol. One of the recipes calls for chopped apples and they were delicious! Most of the recipes used all purpose flour while a couple of them specifically used bread flour to make them. In my opinion the all purpose flour hot cross buns were superior as they needed less attention to knead and develop the gluten but also yielded a fluffier bun once baked. In reference to spices, majority of the recipes used a combination of cinnamon, all spice, nutmeg, clove and vanilla. My personal preference is to use cardamom as well. The dough is enriched with milk, eggs, fat like butter or oil as well. This makes the dough very tender and soft. All the buns need salt, sugar and yeast to prepare them. I used instant dry yeast you could also use active dry yeast but if you are using fresh yeast you need to half the amount. For the crosses, some recipes use an icing while others like a piped on cross made with a mixture of flour and water. Once the buns are baked they either get brushed with honey, a simple apricot glaze, lemon glaze or honey syrup.
Even though some of the recipes suggest using a stand mixer or dough mixer I made all these recipes by hand mainly to test out its potential without a mixer as they all suggest the option is there. Some of them are stir together recipes while others require you to physically knead the dough until smooth. I have used large mixing bowls, rubber spatulas, a dough scraper (this was a blessing, if you do not have one and bake bread a lot please invest into one stat, it will make you life so much easier). The buns are topped with crossed that are piped on and baked in a lined baking tray in the oven. They are brushed with the suggest toppings using a pastry brush.
To start off they are all easy to make, without much effort so it ticks off the box of ease and being approachable to any baker level. The ingredients are simple and honestly straightforward, they all use all purpose flour in the dough and they bake up so fluffy, soft and delicious.
King Arthurs recipe is so fluffy! It is very soft and flavor wise so distinct and yummy – they soak the fruits in apple juice or rum and uses an additional egg yolk for richness not to mention only uses brown sugar.
Paul hollywoods recipe uses soaked dried fruit and chopped fresh apples which are so so delicious in the buns, his recipe was little tedious to handle but definitely worth it.
Recipe tin eats hot cross buns are themes instagramable buns. They were easy to roll into balls and baked up perfectly. They crosses on top look so picture perfect not to mention pillowy soft once baked.
Sally can do not wrong. All her recipes are ace and these hot cross buns do not disappoint. The glaze brushed on top of the buns are genius
While those are my favorite I still enjoyed elements of the other four. Boy who bakes were yummy as soon as they were out of the oven but I didn’t enjoy them as much once cooled down for the effort needed to make it, he uses the tangzhong method of cooking a small portion of flour and milk until sticky – this helps the dough become incredibly soft and fluffy but it is an added step which reduces the ease of preparation. All recipes surprised me with the flavor and the over texture – very simple recipe but freaking good. They are topped with an icing which I initially thought was not right but I am growing to like an iced cross bun. For me Jamie Oliver’s recipe was good but a bit dense in comparison to the others, flavor was bang on – probably because the recipe uses bread flour as opposed to bread flour. While I loved the texture of pioneer woman’s hot cross buns the flavor was a miss for me – probably cause it recipe uses oil instead of butter.

Chef….i have question….why do you subject me to these marvellous hot cross buns once a year…..i had these variations last 2days with butter slammed in them with Coffee….i would love these every week Chef!!!…….get 2 work in this asap Chef❤️❤️❤️
