Pistachio Kunafa Brownies (inspired by the VIRAL Dubai Chocolate)

Fudge brownies layered with a crunchy and creamy pistachio kunafa layer, topped with a chocolate frosting and finished with chopped pistachios and sesame seeds. This dessert recipe is inspired by the viral dubai chocolate bar and the flavors and textures are delicious! 

This trend has been done and redone for a while now. A lot of people will be saying its over done and should be put to rest. I am here to say before we do that, let us squeeze one more variation into the mix as these brownies are going to blow your mind. They are so freaking delicious. No to mention, they are simple and very very easy to make. Just in time to celebrate Eid? Or just in time to celebrate the weekend or you know what – no celebration needed – jus make these and enjoy them yourself.

Now, if you don’t know, these pistachio chocolate bars have been trending all over tiktok. Living in Dubai and I found out about them on Tiktok. These bars don’t mess around, they sell out fast and you need to be quick to get your order in. They are a luxury chocolate to indulge in and not your average candy bar. These guys truly know their chocolate and their flavors. With some very. Interesting combinations but the taste is not the only inviting aspect of these chocolate bars, they look like works of art. What is FIX dessert chocolatier?

FIX dessert is a dessert bar that sells delicious sweet treats based in Dubai. They have a variety of chocolate bars that are not your everyday candy bars they are packed with a variety of flavors and textures to create the most delicious dessert bar. 

Why is FIX dessert bar so popular?

A creator on tiktok posted these chocolate bars which went viral and very soon people who travelled to Dubai and those to lived here wanted to get their hands on these dessert bars. They are simply yummy with the right amount of chocolate to filling ratio. Also they are huge in size, in comparison to the regular candy bars. 

Can I buy FIX Dessert bars outside Dubai?

As of now they don’t sell outside Dubai. Many people suggested you can find them at the airport but you cannot. The only way to get your hands on these bars is by purchasing them through the delivery app.

These dessert bars are chocolate bars filled with a variety of flavors but the most popular one is the pistachio kunafa filling which is crunchy and very. Yummy. 

What ingredients do you need to make these Pistachio kunafa brownies?

To make the brownies we need butter, dark chocolate, vanilla, eggs, flour, cocoa powder, salt. For the kunafa layer we need pistachio butter or paste, kunafa pastry, tahini paste, salt and butter. For the chocolate frosting we need dark chocolate and heavy cream and honey. 

What equipment do you need to make these Pistachio kunafa brownies?

To make the brownies we need a mixing bowl and whisk. I like to use my electric beater to whisk the eggs faster but you can use a whisk. Also, the chocolate and butter can be melted in the microwave as well. I have baked it in an 8×8 inch tin. To make the kunafa pastry we need a sauté pan, spatula and mixing bowl. For the frosting we make it in the microwave in a bowl. 

Serving these Pistachio kunafa brownies?

Cut them into 9 large squares or 36 smaller bite sized squares. They are delicious with milk or coffee but I also like serving them with some ice cream. I would also suggest serving them with a little drizzle of pistachio paste on top. 

Storing these Pistachio kunafa brownies?

They are best stored in air tight containers in the fridge for up to 1 week. I have stored these in the freezer as well for up to 1 month and they are so good, allow them to thaw before eating. Do not warm them up as the the texture will change.

Equipment

  • Mixing bowls

  • Rubber spatula
  • 8x8 inch Square tin
  • Baking paper
  • Teaspoons

Ingredients
  

For the brownies -

  • 150 gm butter
  • 120 gm dark chocolate
  • 120 gm brown sugar
  • 80 gm castor sugar
  • 1 tsp vanilla
  • 2 eggs
  • 95 gm flour
  • 20 gm cocoa powder
  • Pinch of salt

For the pistachio kunafa layer -

  • 30 g butter
  • 200 g kunafa pastry
  • 100 g pistachio butter/paste
  • 30 g tahini
  • Pinch of salt

For the icing -

  • 60 ml whipping cream
  • 120 gm dark chocolate
  • 15 g honey

Garnish with more pistachios and sesame seeds and flakey sea salt

Instructions
 

  • Preheat the oven to 180℃, line an 8x8 inch tin with baking paper and set aside.
  • In a small mixing bowl add the butter and chocolate, heat in the microwave until melted. This took me around 1 minute, stirring every 20 seconds. Allow it to cool and set aside for now.
  • In a larger mixing bowl add the eggs, sugars and vanilla, beat until pale, creamy and doubled in volume. This will take around 3-4 minutes (you can do this with a whisk as well). Add the cooled melted chocolate mixture into the eggs and whisk together.
  • Add the flour, cocoa powder, salt and using a rubber spatula fold the dry ingredients into it.
  • Pour the batter into the lined tin and bake for 22-25 minutes until the top is glossy and the inside is still soft, jam like consistency with a tooth pick test.
  • Allow the brownies to cool a little while we make the kunafa layer: toast the pastry in a pan with a little butter until golden and crispy. This should take 5 minutes on low to medium heat, stir it well. Transfer it to a bowl and mix with pistachio paste, tahini, salt and stir well to combine. Layer it over the brownies and spread it evenly.
  • To make the icing: in a sauce pot add the cream and bring too a simmer. Take it off the heat and add the chocolate, honey and let it sit for a few minutes. Gently start stirring it together.
  • Pour over the kunafa layer, garnish with more pistachios, sesame seeds, flakey sea salt and allow it to cool and set (around 2-3 hours at room temperature or in the fridge for 1 hour).
  • Cut into squares and serve with milk or coffee.

Notes

  • Do not over bake these brownies or else they will get dense and dry.
  • Allow the brownie to set completely before cutting or else you will not get get clean edges when slicing.
