Christmas Movie Recipe Inspiration #9 with this easy dessert recipe that is the perfect sweet treat for your Christmas lunch or dinner.

Welcome to my brand new Christmas recipe series where I make foods/recipes from my favourite Christmas movies. We are on the ninth movie recipe with Self Saucing Christmas Pudding from A Christmas Carol. If you missed the previous movies, check out them out in my recipes page. 

A Little Back Story To Christmas Movies…

Growing up I loved decorating the house in November for Christmas. Once it hit 15th November, my tree and lights were up, I might have taken time to put everything else up as the month progressed but the tree and lights set the mood and the vibes were in full swing. I would put off all the other lights in the house, in the evening and turn on the festive lights. Switch on my favorite Christmas movie and in those days we needed to have CD’s, which I must say I did. Not much has changed since. I get started with my Christmas movies the moment the tree and lights are up. As I’ve grown up, I have noticed the food scenes in these movies with more intent and honestly I love them so much it inspired me to recreate some of these recipes. Hence I am here at the brink of a new series and so excited to share my love for Christmas movies and their food scenes with you.

Christmas Self Saucing Pudding & A Christmas Carol?

While the more common name is Figgy pudding which is mentioned in the Charles Dickens Book – A Christmas Carol, this recipe is a take on the classic. Even though I didn’t truly enjoy this film as much as I did the book and the pudding scene from the book is painted perfectly in my mind. While I do believe the film is a good watch if you haven’t read the book or intend to do so. Even though homemade christmas pudding is classic at the dinning table, this self saucing christmas  pudding is phenomenal and will convert any pudding hater. 

What is Christmas pudding?

Christmas pudding is a a dessert made during christmas, duh! Which is filled with dried fruits, nuts, spices, it is either baked or steamed and you would serve it with warm custard, ice cream or whipped cream. This is a self saucing pudding which makes for a simple dessert, less fussy and very delicious. It is not as heavy and dense as Christmas pudding but more light and saucy. Serve it with vanilla ice cream and toasted almonds. 

What ingredients do you need to make the Christmas Self Saucing Pudding?

The pudding –

To make the pudding we need butter (I have used brown), brown sugar, eggs, milk, maple syrup, vanilla, dried nuts and fruits, flour, cocoa powder, baking powder, spices and salt. Now to make this gluten free you can use gluten free all purpose flour. The cocoa must be unsweetened cocoa powder not drinking chocolate. You can use cacao powder or black cocoa powder. If you want to leave out the brandy you can use water in its place or coffee. The spices are a combination of all spice mix, cinnamon powder, nutmeg powder (must be freshly grated), ginger (I like using freshly grated ginger but powder works well too, you can use stem ginger as well. For the dried nuts and fruits I like using chopped cashews but any nuts of your choice work here. The dried fruit must be soaked in either brandy or water before using. This helps them get plump. I use a mixture of golden raisins, black currants, dates, dried cranberries. You can check out my soaking fruit blog for more information on soaking dried fruits. 

The sauce –

We need more brown sugar, corn flour and hot water. This is poured on top of the cake batter before baking. This mixture makes a delicious caramel like sauce once the pudding bakes. Once it is done, serve it warm with ice cream and toasted almonds. 

What equipment do you need to make this Christmas Self Saucing Pudding?

To make the pudding we need a large mixing bowl to bring the batter together. I have used a rubber spatula to mix the batter you can use a wooden spoon as well. To brown the butter you will need a sauce pan. I have baked the pudding in an oven proof dish.

How to make this Christmas Self Saucing Pudding?

Preheat the oven to 180 deg C. Brush a 9 inch round casserole dish with butter and set aside. In a large mixing bowl add the butter, brown sugar, maple syrup, milk, eggs, vanilla and mix until  smooth. Add the mixed fruit, nuts, flour, almond flour, cocoa powder, baking powder, spices and ginger. Mix until combined. Add the brandy and mix together. Pour into the prepared dish and smooth out the top. Sprinkle over the corn flour and brown sugar in an even layer on top. Pour over the hot water (gently) and bake for 25-30 mins until the top is sticky and saucy and the batter has risen.

How to serve and store this Christmas Self Saucing Pudding?

This pudding is best served warm or hot out of the oven with vanilla ice cream or whipped cream. Top with flakes almonds or any nuts of your choice.

Ingredients
  

  • 160 gm butter melted
  • 200 gm brown sugar
  • 70 gm maple syrup
  • 1 tbsp vanilla
  • 2 eggs
  • 260 ml milk
  • 30 ml brandy
  • 150 gm mixed fruit soaked in brandy or fruit juice
  • 50 gm chopped nuts
  • 250 gm flour
  • 50 gm cocoa powder
  • 50 gm almond flour
  • 1 tsp baking powder
  • 1 tsp all spice
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger grated

Sauce topping -

  • 100 gm brown sugar
  • 15 gm corn flour
  • 275 ml hot water

Instructions
 

  • Preheat the oven to 180 deg C. Brush a 9 inch round casserole dish with butter and set aside.
  • In a large mixing bowl add the butter, brown sugar, maple syrup, milk, eggs, vanilla and mix until smooth.
  • Add the mixed fruit, nuts, flour, almond flour, cocoa powder, baking powder, spices and ginger. Mix until combined. Add the brandy and mix together.
  • Pour into the prepared dish and smooth out the top. Sprinkle over the corn flour and brown sugar in an even layer on top. Pour over the hot water (gently) and bake for 25-30 mins until the top is sticky and saucy and the batter has risen.
  • Serve warm with vanilla ice cream and flaked almonds.

Notes

  • Don’t over bake this pudding as it is meant to be saucy. You will know the pudding is done when there is no dripping raw batter but wet and moist crumbs.
