Self Saucing Guinness Chocolate Pudding

This dessert is a chocolate lovers dream, the pudding is moist, gooey, saucy and packed with flavor. Serve it warm with cream cheese whipped cream and sea salt flakes for the perfect St Patricks Day celebration recipe. Very simple to make and perfect for a crowd. 

If you don’t know or are new here, one of the first recipes I shared on this blog was my Self saucing chocolate pudding recipe which I made during COVID when I used to have ninja bake alongs every day, it was the first recipe I made which was such a hit. Using just a few pantry ingredients the recipe comes together very quickly and feeds a crowd easily, not to mention it is perfect warm.

I have given the original recipe a stout twist with the addition of Guinness beer since St Patrick’s Day round the corner and honestly, I love a good dessert. Also, if you like Guinness chocolate cake then you will absolutely LOVE this recipe, it is indulgent and so delicious, packed with all the chocolate flavor you can dream of with the addition of cocoa powder and chocolate chunks it makes for an intense chocolate dessert that is perfect for any chocolate lover. Having said this I have used a the 0.0% Guinness beer to make this dessert hence even though it has all that stout flavor there is no alcohol in it. So let us get to it. 

What is Guinness?

Guinness is a globally renowned Irish dry stout originating from Arthur Guinness’s brewery at St. James’s Gate Dublin in 1759. It is known for its dark color, creamy top and deep roasted malt flavor with notes of coffee and chocolate. It is brewed with water, barley, hops and yeast. Today you can buy 0.0% alcohol Guinness to still enjoy the flavor and taste but omit the alcohol content from it. 

What is a self saucing chocolate pudding?

This dessert is a baked sweet treat that creates a delicious sauce while baking. It has a British origin and it perfect when served warm with ice cream or whipped cream. It is a simple but delicious treat that is made with a cake batter at the bottom on the baking tray, topped with sugar and boiling water to create the sauce as it bakes. The dessert doesn’t take much time to prepare or bake making it very approachable and simple to follow.

What ingredients are needed to make this self saucing Guinness chocolate pudding?

To make the cake batter we need cocoa powder, flour, brown sugar, baking powder, salt, espresso powder, egg, melted butter, Guinness stout, vanilla. For the topping we need brown sugar, cocoa powder, Guinness stout and hot boiling water. I have served this dessert with a cream cheese whipped cream that needs cream cheese, whipping cream, icing sugar and vanilla.

What equipment is needed to make this self saucing Guinness chocolate pudding?

To make the cake batter we need a large mixing bowl and whisk. The batter is baked in a 10 inch rectangle baking tray, the water is boiled in a kettle or in a sauce pot. For the whipped cream we need a mixing bowl and electric beater. 

How to serve this self saucing Guinness chocolate pudding?

I love serving this warm with the cold cream cheese whipped cream that pairs perfectly with the Guinness chocolate flavor. You could use regular whipped cream, vanilla ice cream or even coffee ice cream. The cold offsets the warm making it delicious. It is best served warm as the pudding hasn’t soaked up all the sauce. As it cools down the sauce gets soaked into the pudding. 

How to store the leftovers?

This is best eaten warm but if you were to eat it the next day and store the leftovers, make sure to store it in an air tight container and store it in the fridge for up to 5 days. When ready to eat, warm it in the microwave for 10-20 seconds or until warm to the touch and serve.

Equipment

  • Large mixing bowl
  • Whisk
  • Rubber spatula
  • Kettle (or pot to make water hot)
  • 10 inch rectangle baking tray/10 inch skillet
  • Electric beater for the whipped cream

Ingredients
  

Cake -

  • 125 gm Flour
  • 50 gm Cocoa powder
  • ½ tsp Salt
  • 1 tsp Baking powder
  • 1 tsp espresso powder
  • 150 gm Brown sugar
  • 100 gm Dark Chocolate chunks/chips
  • 80 gm Butter melted/browned
  • 130 ml Guinness stout
  • 1 tsp Vanilla
  • 1 Egg

Chocolate Sauce -

  • 30 gm Cocoa powder
  • 100 gm Brown sugar
  • 150 ml Hot water boiling hot
  • 150 ml Guinness stout
  • 1 tbsp Instant coffee powder

Cream cheese whipped cream -

  • 240 ml whipping cream
  • 60 g cream cheese
  • 60 g icing sugar
  • 1 tbsp vanilla

Instructions
 

  • Preheat the oven to 170°C, boil the water.
  • In a large mixing bowl add the brown sugar, flour, cocoa powder, baking powder and salt. Whisk until no lumps.
  • Add the vanilla, Guinness, egg, melted butter and whisk together until no lumps. Add the dark chocolate into the batter and mix until distributed evenly.
  • Transfer to the baking tray and set aside.
  • To make the chocolate sauce mix all ingredients together until combined and pour over the batter in the baking tin.
  • Bake for 28-30 mins until the top is risen, cracked, and dry and the sauce is bubbling on the sides. Remove and leave to cool for 10-15 mins before serving.
  • To make the whipped cream, add all the ingredients into a mixing bowl and beat until stiff peaks. Serve it chilled with the warm pudding.

Notes

  • Do not over bake this as the sauce will get absorbed into he pudding as it cools down and we want it saucy.
  • You can use any stout for this recipe, you can also use a 0.0% stout to keep it alcohol free but still enjoy the flavor.
