Strawberries & Cream Rolls

Fluffy and buttery no knead bread, swirled and baked with your favourite strawberry jam and fresh strawberries. Top it with a luscious strawberry milkshake glaze. The only strawberries and cream dessert recipe you need.

If there is one recipe you must make this spring with strawberries I would urge you to take up this baking project and make the fluffiest, softest, most delicious strawberries and cream rolls. They might seem daunting and difficult but hear me out, the dough itself is a no knead buttery bread that is quick, simple and you only need a bow and spatula. I haves used a delicious store bought strawberry jam (you could use homemade) with fresh strawberry chunks as well. The rolls or buns are topped with a strawberry milkshake glaze which is made in the blender. TRUST ME it is not as complicate as it seems. 

Also, we must take a moment to appreciate the combination of strawberries and cream. It is one of the most classic flavors that taste so elegant but is also so easy to achieve. I have used cream cheese here to accentuate the cream element in this recipe which cuts through the sweetness as well and also adds a little tartness. The glaze literally tastes like a strawberry cheesecake blended into a milkshake which gives these rolls so much character. 

Every now and then I always try to make recipes that are a little tedious and challenging to just have fun in the kitchen however I do understand a lot of people want to enter and exit the kitchen so that they don’t have to spend a lot of time in it (my mother is one such person) and my baklava cinnamon rolls would be a good example of that but these strawberries and cream rolls look laborious – they are not. Make them the night before and bake them in the morning to serve for breakfast or brunch. Alternatively you can have them stored in the fridge for up to 1 week and when ready to eat, warm them in the microwave and serve. They make 12 large rolls so it does feed a crowd and you could half the recipe if you like but they have a good shelf life in the fridge so you would be better off having leftovers. 

What are strawberries and cream rolls?

Think cinnamon rolls without the cinnamon butter but with your favourite strawberry jam instead. Rolled up and baked until golden, bubbling and sticky. Topped with a strawberry milkshake glaze which melts into the crack and corners of the rolls. 

What ingredients do you need to make these Strawberries & Cream Rolls?

  • For the dough – We need milk, yeast, brown sugar, flour, salt, baking powder, melted butter
  • For the filling – cream cheese, butter, strawberry jam, fresh or frozen strawberries
  • For the glaze – icing sugar, butter, cream cheese, cream, fresh or frozen strawberries

What equipment do you need to make these Strawberries & Cream Rolls?

To make the dough we need a large mixing bowl and rubber spatula. I have rolled out the dough with a rolling pin. I use a pizza cutter to portion out the dough and a 9×13 inch tin to bake them. We also need a blender to make the glaze. 

Serving these Strawberries & Cream Rolls?

I love these rolls warm out of the oven. But they so good even when they are cold. Serve them with a glass of milk or a cup of English breakfast tea and they are perfection for breakfast, brunch, tea time or even a snack. 

Storing these Strawberries & Cream Rolls?

You can store them in the fridge for up to 1 week and when ready to eat, warm them in the microwave and serve. They make 12 large rolls so it does feed a crowd and you could half the recipe if you like but they have a good shelf life in the fridge so you would be better off having leftovers. You can make the dough ahead and assemble it, cover with cling wrap and place in the fridge over night. When ready to bake, let it come to room temperature and bake as the recipe suggests.

Pro Tips for the perfect strawberry & cream rolls:

  1. Allow the milk, yeast and sugar to bloom – this will ensure the dough will rise later.
  2. Give the dough enough time to rise, this will depend on the environmental temperature where you live. The ideal time is 60 minutes but you want the dough to double in size. 
  3. Flour the surface liberally to ensure the dough doesn’t stick to the surface as it is a stocky dough. You can use a brush to dust off any excess flour the dough has picked up when rolling. 
  4. When portioning the dough and rolling it into scrolls use a pizza cutter to portion it and then roll it up, this gives you clean edges and a clean roll. 
  5. Do not over bake these strawberry rolls or else they will get dry and dense once eaten. 
  6. Pour the glaze over the hot rolls to ensure they soak in the flavor well.

Equipment

  • Large mixing bowl
  • Rubber spatula
  • 9x13 Baking tray
  • Blender
  • Brush
  • Pizza cutter/sharp knife

Ingredients
  

Dough -

  • 1 and 1/2 cup milk
  • 1 tbsp instant yeast
  • 1 tbsp brown sugar
  • 1 cup yogurt
  • 5 cups all purpose flour + 1/2 cup more for rolling
  • 1 tsp salt
  • 1 tbsp baking powder
  • 1/2 cup melted butter

Filling -

  • 1/2 cup butter soft, room temperature
  • 1 cup cream cheese
  • 1 and 1/2 cup strawberry jam
  • 1 cup strawberries fresh or frozen

Glaze -

  • 1/4 cup cream cheese
  • 1/4 cup whipping cream
  • 2 tbsp butter
  • 1/2 cup strawberries fresh or frozen

Instructions
 

  • Pour the warm milk into a mixing bowl, add the yeast and brown sugar. Stir to combine and allow it to foam up, around 5-10 mins. Set aside.
  • Once frothy add the yogurt and stir well. Add the flour, baking powder, salt and melted butter. Stir until you have a sticky dough.
  • Cover and let it rise for 60 minutes or until doubled in volume.
  • Once the dough has doubled in size, liberally flour your clean kitchen counter and roll out the dough with a rolling pin to 9x13inch in height and width approximately.
  • Spread out the butter, then cream cheese and strawberry jam evenly all over the dough. Sprinkle over the chopped strawberries and cut the dough into 12 slices using a pizza cutter.
  • Roll each slice onto itself and using a brush dust off any excess flour the dough has picked up while rolling.
  • Transfer to a baking tray. Cover and let the dough rest for 15 minutes, in the mean time preheat the oven to 180 deg C.
  • Bake the rolls for 25-30 minutes or until the tops are golden brown and risen.
  • To make the glaze, blend all the ingredients together until smooth and creamy, pour over the hot strawberries and cream rolls and let it soak in the glaze for 15 minutes before serving.

Notes

Do not over bake these rolls as they will become dense, the residual heat from the baking tray will continue to cook them.
Drench the rolls in the glaze while still warm so they soak up all the flavor.
