Fluffy and buttery no knead bread, swirled and baked with your favourite strawberry jam and fresh strawberries. Top it with a luscious strawberry milkshake glaze. The only strawberries and cream dessert recipe you need.
If there is one recipe you must make this spring with strawberries I would urge you to take up this baking project and make the fluffiest, softest, most delicious strawberries and cream rolls. They might seem daunting and difficult but hear me out, the dough itself is a no knead buttery bread that is quick, simple and you only need a bow and spatula. I haves used a delicious store bought strawberry jam (you could use homemade) with fresh strawberry chunks as well. The rolls or buns are topped with a strawberry milkshake glaze which is made in the blender. TRUST ME it is not as complicate as it seems.
Also, we must take a moment to appreciate the combination of strawberries and cream. It is one of the most classic flavors that taste so elegant but is also so easy to achieve. I have used cream cheese here to accentuate the cream element in this recipe which cuts through the sweetness as well and also adds a little tartness. The glaze literally tastes like a strawberry cheesecake blended into a milkshake which gives these rolls so much character.
Every now and then I always try to make recipes that are a little tedious and challenging to just have fun in the kitchen however I do understand a lot of people want to enter and exit the kitchen so that they don’t have to spend a lot of time in it (my mother is one such person) and my baklava cinnamon rolls would be a good example of that but these strawberries and cream rolls look laborious – they are not. Make them the night before and bake them in the morning to serve for breakfast or brunch. Alternatively you can have them stored in the fridge for up to 1 week and when ready to eat, warm them in the microwave and serve. They make 12 large rolls so it does feed a crowd and you could half the recipe if you like but they have a good shelf life in the fridge so you would be better off having leftovers.
Think cinnamon rolls without the cinnamon butter but with your favourite strawberry jam instead. Rolled up and baked until golden, bubbling and sticky. Topped with a strawberry milkshake glaze which melts into the crack and corners of the rolls.
To make the dough we need a large mixing bowl and rubber spatula. I have rolled out the dough with a rolling pin. I use a pizza cutter to portion out the dough and a 9×13 inch tin to bake them. We also need a blender to make the glaze.
I love these rolls warm out of the oven. But they so good even when they are cold. Serve them with a glass of milk or a cup of English breakfast tea and they are perfection for breakfast, brunch, tea time or even a snack.
You can store them in the fridge for up to 1 week and when ready to eat, warm them in the microwave and serve. They make 12 large rolls so it does feed a crowd and you could half the recipe if you like but they have a good shelf life in the fridge so you would be better off having leftovers. You can make the dough ahead and assemble it, cover with cling wrap and place in the fridge over night. When ready to bake, let it come to room temperature and bake as the recipe suggests.
