Turkey Cranberry Cheese Sliders

These sliders are so simple to make but they are the perfect holiday hot appetizer to feed your family and friends during the season. The filling can be made ahead making this recipe even easier to prepare. 

When I said I did a few recipes with Spinneys this festive season, I was not fooling around. These turkey cheese and cranberry sliders were exceptional. So simple to prepare and very very comforting. Not to mention they are so festive. The flavors are spot on and I thoroughly enjoyed them hot while my dad ate them cold straight out of the fridge! Hence what I am trying to say is that they can be eaten either way. 

The filling is made in a food processor which keeps it very convenient, we literally blend all the ingredients together until coarse and combined. For the sliders I used potato buns and made sure to season them with cranberry sauce and mustard. Once baked I brushed over a simple garlic butter, find my homemade recipe here – or just use store bought. 

What ingredients do you need to make these turkey cranberry cheese sliders?

So here is the best filling you will make, use a combination of smoked turkey deli meat with turkey breast slices – Spinneys has the best deli meat options that are affordable and not to mention very delicious. You know the quality is good and the overall product is fresh which means half the battle is won with the recipe. I have used a combination of brie and apricot cheddar with parmesan to make these sliders even more delicious, a nice blob of butter, crushed black pepper and dried thyme makes it perfect. 

What equipment do you need to make these turkey cranberry cheese sliders?

I have used a food processor to make the filling but you can chop everything my hand using a knife and chopping board. The buns are layered and toasted in the oven on a baking tray but you can do this on a pan as well. 

Filling options and ideas:

If turkey is not your meat of choice, try using smoked chicken breast deli meat with a combination of bacon and your favorite precooked breakfast sausage. I used already cooked meat here to make the overall cooking time of the sliders 10 minutes. And deli meats do most of the work for you since they are already seasoned and cooked well. You can use ingredients like pistachios for crunch, dried fruit like dates and the flavor options are endless, like rosemary, oregano and parsley. 

Serving and storing these turkey cranberry cheese sliders?

They are best served warm with potato chips or fries. You could do a side salad or a green salad to make it a meal. I enjoyed them fridge cold as well. The leftover sliders can be stored in zip lock bags int he fridge for 1 week or in the freezer for 1 month. When ready to eat you can warm it in the microwave for 20 seconds.

Flourless Chocolate Lime Cake With Margarita Cream - Nigella Lawson’s Recipe

This flourless chocolate cake aka chocolate torte is so easy to eat and perfect to serve a crowd as it is gluten free! It is rich, indulgent and a delicious make ahead dessert to prepare.

Equipment

  • Mixing bowls
  • Electric beater
  • Rubber spatula /metal spoon
  • 7 inch round tin/springform tin
  • Baking paper
  • Microplane grater

Ingredients
  

FOR THE CAKE

  • 75 gm dark chocolate
  • 75 gm soft salted butter
  • 3 large eggs
  • 125 gm caster sugar
  • 50 gm ground almonds
  • 2 tbsp cocoa powder
  • 1 tsp vanilla
  • 1/2 lime zest and juice
  • Icing sugar to dust - optional

FOR THE MARGARITA CREAM

  • 30 ml fresh lime juice
  • 2 tsp tequila
  • 2 tsp cointreau or triple sec
  • 30 gm icing sugar
  • 125 ml double cream

Instructions
 

Flourless Chocolate Cake:

  • Preheat the oven to 180°C/160°C Fan, line 7inch cake tin with baking parchment, use enough paper to come up the sides.
  • In a small bowl melt the chocolate and butter together in the microwave for 15 second intervals until smooth, then set aside to cool slightly.
  • In a large mixing bowl beat the eggs and sugar together until about tripled in volume, pale and fluffy. I used a hand held electric beater.
  • Add the ground almonds with the cocoa powder and fold this gently into the egg and sugar mixture.
  • Half way through add the slightly cooled chocolate mixture, lime zest and juice and fold. Be gentle.
  • Pour and scrape this mixture into the prepared tin and bake in the preheated oven for 30 mins. We want the top to be crusty and the cake will wobble if you shake it. It will firm up as it sets.
  • Allow the cake to cool on a wire rack for a couple of hours or over night.
  • When cold, remove the cake by lifting it from the excess baking paper, dust with icing sugar if you wish and serve with the Margarita Cream.

Margarita Cream:

  • Slowly whisk in the double cream and keep whisking until you have a light, floaty, aerated mixture.
  • Add the icing sugar, lime juice, tequila and orange liqueur together, then whisk until smooth and stiff peaks, serve with the Chocolate Lime Cake above.

  • Beat the eggs and sugar well before adding the dry ingredients into it, this give the torte its light and tender texture once baked
  • Do not over bake the cake we want it to wobble when you take it out of the oven as it will firm up as it cools down
  • You can serve the cake with any whipped cream or ice cream
