Broccoli Corn Bars

These veggie packed bars are a simple but savory snack to make very easily and tastes delicious. Filled with assorted cheese and herbs - it is a yummy appetizer recipe to mix up.

Ingredients
  

  • 250 g broccoli
  • 50 g sweet corn
  • 1 garlic clove
  • 1 medium potato boiled and chopped
  • 1 green chili
  • 2 tsp olive oil
  • 3 scallions
  • 4 tbsp parsley
  • 150 g flour
  • 1 tsp oregano dried
  • 1 tsp basil dried
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tbsp yogurt
  • 60 ml milk
  • 3 eggs
  • 60 ml olive oil
  • 113 g feta cheese crumbled
  • 113 g mozzarella cheese shredded
  • 4 tbsp parmesan cheese

Instructions
 

  • Preheat the oven to 180 deg c and line a 9x9 inch tin with baking paper.
  • In a food processor add the broccoli, scallion, green chili, garlic, parsley and pulse until it is coarse.
  • In a sauté pan on low to medium heat add 2 tsp olive oil, the coarsely ground veg, sweet corn and potato. Cook for 3-5 minutes or until soft. Take off the heat and allow to cool.
  • In a large mixing bowl add the eggs, milk, yogurt, olive oil and whisk until smooth.
  • Add the flour, herbs and baking powder, whisk until smooth.
  • Add the broccoli mixture, feta, mozzarella and fold together until combined.
  • Pour into the lined tin, top with the parmesan cheese and bake for 28-30 minutes or until set and the top is golden.
  • Allow it to cool completely before cutting into bars.

Notes

  • You could add other vegetables into the mixture like peppers, jalapeños, zucchini etc.
  • I also like adding more mozzarella cheese on top before baking along with the parmesan cheese.
  • If you don’t have a food processor you can use a knife to finely chop everything.
