Chicken Caesar Lettuce Bites - low carb recipe in 5 minutes!

Crunchy and fresh lettuce cups made with a chicken caesar salad filling that has greek yogurt making it lighter and healthier. A simple, wholesome and delicious low carb cold appetizer for summer.

Ingredients
  

  • 2 cups cooked chicken
  • 1/4 cup parmesan cheese grated
  • 1 garlic clove
  • 2 tbsp greek yogurt
  • 1 tsp oregano
  • 1/2 tsp black pepper
  • Salt to taste
  • 1/4 cup caesar salad dressing *check notes*
  • 2 baby lettuce gems
  • 1/2 cup croutons

Instructions
 

  • Separate the baby lettuce gem leaves, wash and let them dry. Set aside.
  • To make the filling, chop the chicken and garlic with the parmesan, greek yogurt, seasonings until fine.
  • Add the caesar salad dressing and chop again.
  • Serve with the lettuce leaves, croutons and more dressing. You could add more cheese on top if needed.

Notes

  • *Homemade caesar salad dressing recipe*
  • I like storing this filling in the fridge and allowing it to get cold before serving in the lettuce leaves
  • If you like a little heat add chili flakes that are toasted on the pan
  • If you don’t have baby lettuce gems, you can use any the smallest lettuce head
    Swap the croutons with toasted nuts to keep this recipe gluten free
