Chocolate White Wine Truffles

Indulgent and velvety smooth truffles, fit for any occasion. The white wine cuts the richness and adds for an acidity that balances the sweetness making for a perfect melt in your mouth bite.

Equipment

Ingredients
  

  • 300 gm Dark chocolate
  • 100 gm Almond milk
  • 15 gm White wine
  • 15 gm Cocoa powder
  • 5 gm Maple syrup

Decoration

  • 30 gm Cocoa powder
  • 1/2 tsp Sea salt

Instructions
 

  • Melt the chocolate until smooth (which ever method you are comfortable with)
  • Add the milk, wine, cocoa powder and stir. Keep stirring until combined. Taste and see if you need to add the maple. If not, leave it out.
  • Transfer to a shallow bowl and leave in the fridge to set for 2 hours.
  • Once firm, scoop out tablespoon worth of the mixture in your hands and roll until it forms the shape of a ball. Roll into the extra cocoa powdered sprinkle with sea salt on top.
  • Let them set for 10-15 mins before serving and eating.

Notes

Pro Tips
> Keep an eye on your chocolate while melting, do not let it over heat as this will make your chocolate grainy.
> Do not whisk the mixture together, use a spoon and patiently mix all the ingredients until combined, you don’t want to add air but just ensure all the ingredients are mixed through.
> If the mixture is sticking to your hands too much wear gloves or oil your hands a little.
> You can dip the set truffles into melted chocolate instead of rolling them in cocoa powder as well.
