Servings 24 chocolates

Equipment

  • Mixing bowl
  • Microwave & Freezer
  • Spoons
  • Moulds for the chocolates (I used a Christmas tree silicon mould)
  • Brush

Ingredients

  • 200 gm dark chocolate I used Lindt 60%
  • 5 ml olive oil
  • Sea salt flakes garnish

Fillings -

  • Salted caramel sauce
  • Lotus spread
  • Mincemeat

Instructions

  • We start by melting the dark chocolate in a bowl in the microwave. I like doing this in 20 second intervals until the chocolate is melted and smooth. Add the olive oil and stir to combine.
  • Add a little teaspoon worth of the melted chocolate in the mould and spread it around as thin as possible. We don’t want any gaps/spaces in the bottom as when we add the filling it shouldn’t leak out.
  • Once the mould is coated with the melted chocolate, place in the freezer for 5 minutes.
  • After it is set, add the fillings into the mould and level it out. Cover the top with the remaining melted chocolate and smooth it out.
  • Place in the freezer and let it set for 10 -15 minutes. Remove the chocolates from the mould, wrap in golden foil wrappers and transfer to a platter.
