Easy Banana Bread Recipe

This banana bread is not only easy to make but also very delicious, it has a moist and fluffy texture that is soft and has a tender crumb making it THE BEST recipe you will bake.

  • 9 inch loaf tin
  • Baking paper

Ingredients
  

  • 58 gm butter
  • 56 gm oil
  • 175 gm caster sugar
  • 25 gm brown sugar
  • 2 large overripe bananas
  • 2 eggs
  • 75 ml yogurt
  • 1 tsp vanilla optional
  • 200 gm flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon powder
  • Pinch of salt

Instructions
 

  • Preheat the oven to 180℃, line a 9 inch loaf tin with baking paper and brush with a little oil, set aside.
  • In a blender add the bananas, eggs, yogurt, butter, oil, sugar, vanilla and blend until smooth.
  • Pour into a large mixing bowl, add the flour, baking powder, baking soda, salt, cinnamon.
  • Whisk together until combined. We do not want any flour lumps in this batter so make sure it is smooth.
  • Transfer the batter into your lined tin and bake for 35-40 minutes or until a tooth pick inserted into the center comes out clean.
  • Allow to cool in the tin until it is easier to handle and remove from the loaf tin, allow to cool on a wire rack. Slice and serve.

Notes

  • Make sure to do a tooth pick test with the banana bread before removing from the oven - wee are looking for it to come out clean or with tiny dry crumbs. if need be bake it for a few minutes longer or remove ahead of time if done.
