58gm butter
56gm oil
175gm caster sugar
25gm brown sugar
2large overripe bananas
2eggs
75mlyogurt
1tspvanillaoptional
200gm flour
1tspbaking powder
1/2tspbaking soda
1/4tspcinnamon powder

Instructions
Preheat the oven to 180℃, line a 9 inch loaf tin with baking paper and brush with a little oil, set aside.
In a blender add the bananas, eggs, yogurt, butter, oil, sugar, vanilla and blend until smooth.
Pour into a large mixing bowl, add the flour, baking powder, baking soda, salt, cinnamon.
Whisk together until combined. We do not want any flour lumps in this batter so make sure it is smooth.
Transfer the batter into your lined tin and bake for 35-40 minutes or until a tooth pick inserted into the center comes out clean.
Allow to cool in the tin until it is easier to handle and remove from the loaf tin, allow to cool on a wire rack. Slice and serve.
Notes
Make sure to do a tooth pick test with the banana bread before removing from the oven - wee are looking for it to come out clean or with tiny dry crumbs. if need be bake it for a few minutes longer or remove ahead of time if done.
