Easy Chocolate Mousse Recipe
This eggless chocolate mousse is a keeper, inspired by Nigella Lawson’s recipe this no bake dessert is fuss free and needs a handful of ingredients which comes together easily without any fuss. It is the perfect sweet treat to make on a Monday and store in your fridge for the week.

- 150 gm mini marshmallows
- 50 gm soft butter
- 60 ml cup boiled water
- 1 tsp instant coffee powder
- 250 gm good dark chocolate chopped
- 284 ml heavy cream
- 1 tsp vanilla extract
- Pinch of salt
In a heavy-based saucepan add the marshmallows, butter, chocolate, salt, instant coffee powder and boiled water.
Place on medium to low heat, stirring every now and again until smooth. Remove from the heat, allow to the chocolate mixture to cool.
Whip the cream with the vanilla until thick, and then fold into the cooled chocolate mixture until you have a smooth mixture.
Pour or scrape into 4 glasses or ramekins, or 6 smaller ones, and chill until you want to eat.
- Allow the mousse to set for at least 30 minutes before serving, this makes it taste more rich and decadent.
- Serve it with sea salt flakes on top, a drizzle of olive oil and crushed toasted walnuts/biscuit crumble.
