Easy Chocolate Mousse Recipe

This eggless chocolate mousse is a keeper, inspired by Nigella Lawson’s recipe this no bake dessert is fuss free and needs a handful of ingredients which comes together easily without any fuss. It is the perfect sweet treat to make on a Monday and store in your fridge for the week.

Equipment

  • Large mixing bowl
  • Electric beater
  • Rubber spatula
  • Sauce pot

Ingredients
  

  • 150 gm mini marshmallows
  • 50 gm soft butter
  • 60 ml cup boiled water
  • 1 tsp instant coffee powder
  • 250 gm good dark chocolate chopped
  • 284 ml heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • In a heavy-based saucepan add the marshmallows, butter, chocolate, salt, instant coffee powder and boiled water.
  • Place on medium to low heat, stirring every now and again until smooth. Remove from the heat, allow to the chocolate mixture to cool.
  • Whip the cream with the vanilla until thick, and then fold into the cooled chocolate mixture until you have a smooth mixture.
  • Pour or scrape into 4 glasses or ramekins, or 6 smaller ones, and chill until you want to eat.

Notes

  • Allow the mousse to set for at least 30 minutes before serving, this makes it taste more rich and decadent.
  • Serve it with sea salt flakes on top, a drizzle of olive oil and crushed toasted walnuts/biscuit crumble.
