This Italian dessert is made with coffee soaked Savoiardi biscuits, layered with a rich mascarpone filling and topped with cocoa powder. It is a simple and easy no bake recipe that perfectly serves two portions.
We need to stir everything together until combined. Set it aside.
To make the mascarpone cream -
In a bowl add the whipping cream, castor sugar, vanilla, salt and using an electric beater or whisk we want to beat it until thick and soft peaks. It will take a bit of time by hand but you could also do this in a stand mixer.
Add the mascarpone and whip again until thick. We need stiff peaks here.
Assembly -
In the tin add spoon of the the mascarpone mixture and spread it evenly. Dunk a biscuit into the coffee soaking liquid and place over the cream. Repeat until you have a single layer of the soaked biscuits.
Spoon over half of the mascarpone and spread it out evenly. Add another layer of the biscuits soaked in the coffee. Top with the other half of the mascarpone and even it out with the back of a spoon or offset spatula.
Transfer to the fridge and let it set for 30 mins minimum. In the mean time make the coffee sauce by mixing the ingredients in a jug until combined.
When ready to serve dust the top with cocoa powder using a strainer. Scoop and serve with the coffee sauce as needed.
Notes
The coffee sauce is optional but it is such a delicious addition.
