A simple Mexican street style corn recipe that is charred over the fire and brushed with a sour cream and cheese sauce. It is vegetarian and so simple to make, the BEST way to cook corn ever.

4corn on the cob
Elote dress/Elote sauce
2tbspbuttermelted
2garlic clovesminced
4tbspthick yogurt/sour cream
1/3cupfeta cheesecrumbled
2tbspfresh cilantrochopped
1/4tspchili powder
1/4tsppaprika powder
Pinchof cumin powder
Salt to taste
1lime juice
Elote seasoning
1/4tsppaprika powder
1/4tspchili powder

Instructions
To make the elotes dressing/elotes sauce we mix all the ingredients in a bowl, cover and place in the fridge.
In another bowl mix the ingredients for the seasoning and set aside with the prepared garnishes. If grilling over the fire, use a pair of metal tongs to turn the corn on the cob over the heat after it gets charred. This should take 3-5 minutes. You can do this over a grilling pan or any pan as well.
Once grilled on all sides and cooked through take off the heat and brush/spoon the elotes dressing over the corn on all sides.
Sprinkle with the seasoning and crumble over a little more cheese. Garnish with fresh cilantro and serve.
Notes
Make the elotes dressing ahead of time and store in the fired over night, this helps the flavor develop.
