Equipment

  • Brush
  • Knife
  • Baking tray
  • Baking paper

Ingredients

  • 1 block 400g feta cheese (drain out the excess water by placing it over a strainer)
  • 10 filo pastry sheets
  • 45 mg melted butter

Optional:

  • Sesame seeds black pepper powder, dried basil

Serve with:

  • Sweet chili sauce & honey

Instructions

  • Preheat the oven to 180℃, line a baking tray with baking paper and set aside.
  • Cut the feta into sticks, 1/2inch x 3inch in breadth and height. If the feta doesn’t cut into sticks it doesn’t matter you can use smaller pieces of feta assembled together.
  • Brush a sheet of filo with the melted butter and fold over, cut the sheet into 4 squares and place the feta in each square at the end.
  • Brush the edges with melted butter and roll away from you to create a cigar/roll/log. Transfer to the lined baking tray and cover with a damp tea towel.
  • Repeat the process until all the pastry and feta is finished.
  • Brush the tops with melted butter, sprinkle over the dried herbs, sesame seeds and bake for 20-23 minutes or until golden and crispy.
  • Serve it hot with sweet chili sauce and honey.

Notes

  • Do not wrap the cheese in the filo pastry tightly as it will burst out of the roll while baking.
  • Liberally brush the pastry with butter as this helps it get crispy once baked.
  • Bake them until golden and crusty, this might take time as the cheese can release a lot of liquid.
