Grilled Cherry Tomato Caprese Salad with Crunchy Garlic

This classic Italian salad is filled all the fresh flavors of tomatoes, cheese, basil, balsamic vinegar and salt. The recipe uses grilled tomatoes, burrata cheese and crunchy garlic for a delicious addition to the salad perfect for summer.

Equipment

  • Sauté pan
  • Small sauce pot
  • Knife
  • Chopping board

Ingredients
  

  • 15-20 Cherry tomatoes preferably on the vine
  • 1 whole burrata cheese
  • 10-15 fresh basil leaves
  • 2 garlic cloves
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt & Pepper to taste

Serve with:

  • Crusty bread

Instructions
 

  • In small sauté pan add the cheery tomatoes and place on the stove on low to medium heat.Cover with a lid and cook for 5-10 minutes until the outside skin is blistered and they have a little color.
  • While this is cooking let us make the crunchy garlic, slice the garlic thinly. In a small sauce pot add the olive oil and transfer the sliced garlic. Place on low heat and cook for 5-8 minutes or unit the garlic is lightly golden and the oil is bubbling.
  • In a serving platter add the warm cherry tomatoes, burrata cheese, basil leaves, season with salt, pepper and balsamic vinegar.
  • Top with the crunchy garlic and serve with the crusty bread.

Notes

  • It is best to serve this salad when you are about to eat it so the tomatoes are warm while the cheese is cold and the garlic is crunchy and warm too.
