Fluffy and soft apple cinnamon pancakes that are healthy, packed with oats and mixed in a blender. Serve it with maple syrup and butter. The easiest and healthiest fall breakfast recipe.
The pancake batter will feel thicker, pour 1/4th cup of pancake batter into the pan and cook for 1-2 minutes or until you see bubbles rise to the surface, flip the pancake and cook for 1-2 minutes on the other side.
Transfer to a plate and serve with maple syrup, butter and more cinnamon.
Notes
If the pancake batter is seeming extra thick ad a little milk or water into he batter to make it thinner, if it is too thin add a little more oats and blend again, allow to sit for a few minutes as oats absorbs moisture and will get thicker.
I like adding 1/4th tsp baking soda with 1/2 tsp lemon juice into the batter to make it softer and fluffier but this is totally optional as the pancakes are delicious either way.
