Koreiskaya Morkovcha/ Korean Carrot Salad/ Russian Carrot Salad

This simple, crunchy spicy VIRAL carrot salad mixed with a lot of garlic, coriander, spices and salt. A little vinegar gives it a fermented taste that is tangy and delicious. It is quick and easy side dish which is why it is currently trending thanks to Tiktok.

Equipment

  • Peeler (julienne)
  • Mixing bowl
  • Microplane (minced garlic)
  • Tongs
  • Glass jar

Ingredients
  

  • 800 gm carrots
  • 3 tbsp white vinegar
  • 1 tsp salt
  • 1 tsp honey
  • 1 whole head of garlic
  • 1/2 tsp coriander powder
  • 1/4 tsp cayenne pepper powder
  • 1/4 tsp paprika powder
  • 1/2 tsp black pepper powder
  • 3 tbsp olive oil

Instructions
 

  • Start by shredding the carrots, place them into a large mixing bowl. Add the salt, honey, vinegar and give it a massage. Set it aside for 5-10 minutes.
  • Mince the garlic into the bowl with the carrots, add coriander powder, cayenne pepper, black pepper powder, vinegar.
  • Heat the olive oil in a pan and pour over the carrots. Take your time and stir it around. Once mixed through, give it a taste and adjust the seasoning.
  • Pack it into a glass jar and store in the fridge for 5 days. Serve it chilled with any meal or enjoy as a snack.

Notes

  • The carrots myst be julienned, if you are grating it then keep in mind it wont be as crunchy and will lose it texture after a couple of days.
  • You must add the salt, honey and vinegar to the carrots first, this is wha makes it a pickle.
  • Adjust the seasoning before storing
  • This salad tastes way better the next day so it is best to make ti a day ahead
