Lemon Blondie Bars Regular Batch (in 20 mins)

Chewy, fudgy and zesty. These lemon blondie bars are so fresh and delicious. They are very simple to and need only 5 ingredients to make and its ready in 20 mins. A quick sweet treat dessert bar that is easy and yummy.

Equipment

  • Large mixing bowl
  • Rubber spatula
  • 8x8 square tin
  • Baking paper

Ingredients
  

  • 1/2 cup castor sugar
  • 2 lemons zest
  • 1/2 cup butter melted
  • 2 eggs
  • 1 cup flour
  • 2 tbsp lemon juice

Icing

  • 6 tbsp icing sugar
  • 1 tbsp lemon juice

Instructions
 

  • Preheat the oven to 180 deg c, line an 8x8 inch square tin with melted butter and baking paper.
  • In a bowl add the castor sugar and lemon zest, rub together. Add melted butter and stir.
  • Add egg and stir. Add flour, lemon juice and stir. Optional: add a pinch of salt.
  • Transfer to the tin and bake for 12 mins.
  • Mix the glaze ingredients together until smooth and pour over the warm lemon Blondies. Let them set and cut into squares.

Notes

  • Do not over mix the blondie batter as it will give you a tough bar once baked.
  • Allow the glaze to set for 10 minutes before slicing and serving.
  • 1/2 lemon juice is 1 tbsp lemon juice approx.
