Lemon Blondies

Chewy and soft blondies packed lemon juice and zest making it a lemon lovers dream dessert. It is a small batch recipe that is easy and ready in under 30 mins. A simple sweet treat that is delicious, refreshing and the perfect end of summer recipe.

Equipment

  • Mixing bowl
  • Rubber spatula
  • 8 inch loaf tin
  • Baking paper

Ingredients
  

Lemon Blondies:

  • 1/4 cup castor sugar
  • 1 lemon zest and 1/2 lemon juice
  • 1/4 cup butter melted
  • 1 egg
  • 1/2 cup flour

Glaze:

  • 1 tsp lemon juice other half
  • 3 tbsp icing sugar

Instructions
 

  • Preheat the oven to 180 deg c, line an 8 inch loaf tin with melted butter and baking paper
  • In a bowl add the castor sugar and lemon zest, rub together. Add melted butter and stir.
  • Add egg and stir. Add flour, lemon juice and stir. Optional: add a pinch of salt
  • Transfer to the tin and bake for 10-15 mins. Let it cool once done.
  • Mix the glaze ingredients together until smooth and pour over the lemon Blondies. Let them set and Cut into squares.

Notes

  • Do not over mix the blondie batter as it will give you a tough bar once baked.
  • Let the blondie cool for 5-10 minutes before drizzling the glaze on top.
  • Allow the glaze to set for 10 minutes before slicing and serving.
  • 1/2 lemon juice is 1 tbsp lemon juice approx.
