Preheat the oven to 180 deg C.
In a large 10 inch skillet add the olive oil and fry the mince until golden brown on medium heat. Remove the meat from the skillet and transfer to a plate, set aside.
In the same skillet add the onions, ginger garlic paste, peppers, jalapeños, fresh cilantro. Sauté for a couple of minutes. Add the meat into the skillet, add the seasoning and stir.
Add the corn, baked beans, black beans, rice and stir together. Pour in the passata, water/stock and bring to a boil. Cover and cook for 15-18 minutes until most of the liquid has evaporated and the rice is almost cooked through.
Top with the shredded cheese and place in the oven for 10 minutes to finish cooking the rice and melt the cheese.
Serve with the the lettuce, avocado, fresh cilantro, lime etc.
