Pickle Cheese Galette With Hot Honey (spring lunch recipe)

Flaky and buttery short crust pastry filled with a family of cheeses like mozzarella, cheddar, gouda, parmesan, cream cheese, pickles, herbs and black pepper. Topped with a paprika honey and served with a green salad. It is the easiest meal to whip up in little time but so comforting and perfect to ring in spring.

Ingredients
  

  • 1 short crust pastry recipe linked in notes
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup slices cheddar cheese
  • 1/4 cup gouda cheese
  • 1/2 cup parmesan cheese
  • 1/4 cup pickle slices
  • 1 tsp fresh thyme
  • 2 tsp dried oregano
  • 2 tsp crushed black pepper

Hot honey

  • 1/4 cup honey
  • 1/2 tsp paprika powder

Instructions
 

  • Preheat the oven to 180 Degrees C.
  • Roll out the short crust pastry dough to 1/4 th inch in thickness and at least 12 inches in diameter- I like doing this between two sheets of baking paper which makes it easier to transfer to the baking tray.
  • In the middle spread the cream cheese, add the mozzarella, cheddar, gouda layering the sliced pickles, fresh thyme, crushed black pepper between each layer of cheese. Top with half the parmesan cheese.
  • Cover with a piece of foil on the top and bake for 30 minutes. Remove the foil and continue baking for 10 minutes until golden and bubbly.
  • While this is happening warm the honey with paprika and take off the heat once simmering.
  • Add the remaining parmesan cheese on the hot galette. Drizzle the hot honey over the galette, slice and serve.

Notes

  • You can use shredded cheese or slices, keep in mind slices might take longer to melt.
