Pumpkin Mug Cake (microwave recipe in under 5 mins!)

This fluffy pumpkin spice mug cake is baked in the microwave and is the perfect fall dessert to make in under 5 minutes! It is easy and simple to mix directly in the mug.

Equipment

  • Large mug
  • Rubber spatula/small whisk
  • Microwave

Ingredients
  

  • 3 tbsp pumpkin puree
  • 2 tsp oil
  • 2 tbsp brown sugar
  • 1/2 tsp vanilla
  • 1/4 cup flour
  • 1/4 tsp baking soda
  • 1/2 tsp pumpkin spice
  • Pinch of salt

Serve with:

  • Vanilla ice cream maple syrup

Instructions
 

  • In a large coffee mug add the pumpkin puree, oil, sugar and stir until smooth.
  • Add the flour, baking soda, salt, pumpkin spice and stir again.
  • Bake in the microwave at 30 second intervals until risen and baked through. It took me 1 minute and 30 seconds.
  • Serve with a scoop of vanilla ice cream, maple syrup and a dash of cinnamon powder.

Notes

  • Do not over bake this mug cake or else it will become dry.
  • Serve it warm with vanilla ice cream.
