Sesame Prawn Toast

Prawn toast or shrimp toast is a hot appetizer recipe that is crispy, crunchy and very delicious. It is cut into little triangles and made with minced shrimp, coated in sesame seeds and fried. Serve it hot with sweet chili sauce.

  • Food processor
  • Sauté pan
  • Flat metal spatula
  • Wire rack
  • Spoon

Ingredients
  

  • 8 slices white bread
  • 300 gm fresh prawns
  • 1 large green onion
  • 3 tbsp fresh coriander
  • 1 inch pc ginger
  • 2 garlic cloves
  • 1 tsp soya sauce
  • 1 tsp sesame seed oil
  • 1 tsp lime juice
  • 1 tsp white pepper powder
  • Pinch of salt
  • 1/2 cup sesame seeds
  • 250 ml oil for frying

Serve with -

  • Lime wedges
  • Sweet chili sauce
  • Soya sauce

Instructions
 

  • In a food processor add the green onions, ginger, garlic and blend until coarse.
  • Add the fresh prawns, egg white, soya sauce, sesame oil, lime juice, coriander and blend again. Once the paste is smooth lets get the bread and oil ready.
  • Slice the bread into triangles. Pour oil into a large pan and let it get hot.
  • Spread 1 tbsp worth of the prawn mixture onto a sliced piece of bread and spread it out evenly.
  • Press the bread (prawn mince side up) into the sesame seeds and pat it with your palms to secure it. Repeat up all the mixture is spread over the bread.
  • Fry in the oil sesame side down or bread side down. We want to cook the shrimp side down for 2 - 3 minutes until the mixture is golden and cooked through.
  • Flip over and cook on the bread side for 30 seconds until golden and crispy. Serve hot with lime wedges, soya sauce and sweet chili sauce.

Notes

  • If you don't have a food processor you can use a spice grinder or chop all the ingredients finely with a knife.
