Single Serve Banana Bread

This fluffy and light banana bread uses one overripe banana, a few pantry ingredients to make the tender and delicious recipe. It is a quick and easy quick bread/cake that comes together easily and is no fuss.

Equipment

  • Mixing bowl
  • Fork
  • 5 inch round tin
  • Baking paper

Ingredients
  

  • 1 large overripe banana
  • 1 egg
  • 1 tsp vanilla
  • 1 tbsp sugar
  • 1 tbsp oil
  • 1 tbsp milk
  • 1/4 cup flour + 1 tsp corn starch
  • 1/4 tsp baking soda
  • Pinch of salt

Instructions
 

  • Preheat the oven to 180 Degrees C, line a 5/6inch round tin by brushing it with oil and adding a sheet of baking paper. Set aside.
  • In a mixing bowl add the banana and mash until it is a paste consistency, add the egg, vanilla sugar, oil, milk and using fork stir together.
  • Add the flour, corn starch, baking soda, salt and stir together.
  • Pour into the prepared tin and bake for 25-30 minutes or until a tooth pick inserted into the middle comes out clean.

Notes

  • You can add chocolate chips into the batter or blueberries as well. I love add walnuts for that additional crunch.
