Single Serve Banana Bread
This fluffy and light banana bread uses one overripe banana, a few pantry ingredients to make the tender and delicious recipe. It is a quick and easy quick bread/cake that comes together easily and is no fuss.

large overripe banana

egg

vanilla

sugar

oil

flour + 1 tsp corn starch

baking soda

Instructions
Preheat the oven to 180 Degrees C, line a 5/6inch round tin by brushing it with oil and adding a sheet of baking paper. Set aside.
In a mixing bowl add the banana and mash until it is a paste consistency, add the egg, vanilla sugar, oil, milk and using fork stir together.
Add the flour, corn starch, baking soda, salt and stir together.
Pour into the prepared tin and bake for 25-30 minutes or until a tooth pick inserted into the middle comes out clean.
Notes
You can add chocolate chips into the batter or blueberries as well. I love add walnuts for that additional crunch.
