Single Serve Red Velvet Cookies

Chewy red velvet white chocolate chunk cookie dough perfect for 2 cookies. Crispy and fudgy in every bite but very easy to make.

Ingredients
  

  • 2 tbsp Oil
  • 2 tbsp Brown sugar
  • 1 tbsp Castor sugar
  • 1 tbsp Greek yogurt
  • 1/4 tsp Red food coloring gel
  • 6 tbsp Flour
  • 1 tbsp Cocoa powder
  • 1/4 tsp Baking soda
  • Pinch of salt
  • 1 drop Vinegar
  • 3 tbsp White chocolate chopped

Instructions
 

  • Preheat the oven to 180 ℃ and line a baking tray with baking paper.
  • In a small bowl add the oil, brown sugar, white sugar and mix well until the sugar is dissolved. Add the yogurt and mix. Add the red food coloring and mix well.
  • Add the flour, cocoa powder, baking soda, salt and vinegar. Stir to combine. Add the white chocolate chunks and stir to combine.
  • Divide the dough into 2 parts and roll into a ball. Place on a baking tray and add more chocolate on top.
  • Bake for 8 - 10 mins until they have spread and puffed-up. The top will be dry to touch but if you press into the cookie it will be soft. Do not over bake these cookies they can get dry very fast. Transfer them to a wire rack and let them cool down before serving with a glass of milk.

Notes

If the mixture isn’t red enough, add more color a little at a time mixing well after. Every brand of color is different and you may need more depending. Always add less and mix well before increasing the amount as we cannot take the color out once added.
