Small Serve Fudge Brownies (in 30 minutes)

Chewy, rich in chocolate, delicious and indulgent. These chocolate fudge brownies are perfect for a cozy baking night in, serving 4 people in under 30 minutes - it is the perfect small serve recipe.

Ingredients
  

  • 66 g dark chocolate
  • 40 g butter
  • 1 large egg
  • 60 g brown sugar
  • 30 g castor sugar
  • 20 g flour
  • 1 tsp corn flour
  • 10 g cocoa powder
  • 1/4 tsp salt

Instructions
 

  • Preheat the oven to 180 deg C and line a 3x3 inch square tin or an 8 inch loaf tin and set aside.
  • In a bowl add the butter, dark chocolate and melt in the microwave for 20 second intervals, stirring between each interval - until smooth. Allow to cool.
  • In a large mixing bowl add the egg, sugars and vanilla, whisk until pale, creamy and smooth. Around 2-3minutes, you can do this with an electric beater as well.
  • Add the melted chocolate and butter mixture, whisk until combined.
  • Add the flour, corn flour, cocoa powder, salt and fold together until combined.
  • Pour into the prepared tin and bake for 12-15 minutes until the top is shiny, crinkly and a tooth pick inserted into the center comes out with damp/moist/sticky crumbs.
  • Allow it to cool before cutting into 4 equal pieces.

Notes

  • Whisk the egg and sugars well to ensure you get that shiny crust on top of the brownie once baked.
  • To make this eggless, use 1 flaxseed egg i.e. 1 tbsp flaxseed powder mixed with 2 tbsp water, stir together and allow it to sit for 2 minutes to form a gel like consistency before using.
  • Do not over bake these brownies as they will continue to set and cook as it cools down in the hot tin.
  • Let the brownie cool completely before cutting as it will fall apart if you try cutting it while warm.
