Equipment

  • Large sauté pan with lid
  • Wooden spatula
  • Tongs
  • Grater

Ingredients

  • 2 tbsp olive oil
  • 1 onion diced
  • 3 garlic cloves minced
  • 2 cans tomato chopped
  • 1 tbsp tomato paste
  • 2 tsp cocoa powder
  • 6 fresh basil leaves
  • 2 tsp dried oregano
  • 1 bay leaf
  • 1/4 cup red wine
  • 1/2 cup water
  • Salt & Pepper to taste

Pasta -

  • 250 gm spaghetti
  • 1 tbsp olive oil
  • Parmesan cheese grated
  • Fresh basil

Instructions

  • In a large sauté pan on medium heat, add olive oil, diced onions, garlic and a little salt, let this cook until soft.
  • Add the tomato paste, dried and fresh herbs and stir well. Cook for a minute and add the red wine into the pan, cook until the liquid evaporates.
  • Add the canned tomatoes, water and stir. Cover and cook for 20-30 mins on low low heat until thick and you can smell the BEST tomato sauce aroma. Season with salt and pepper, take off the heat and set aside.
  • Cook the pasta as per the packet instructions and save some of the cooking liquid.
  • Toss the drained pasta into some of the sauce in a large platter, add olive oil, parmesan cheese and some of the cooking liquid if needed. Serve hot.

Notes

  • You can store the extra sauce in containers in the freezer for upto 1 month.
  • Serve this sauce with any pasta you like, you can also use it as pizza sauce (don’t come for me, its not traditional but it does the job well!)
  • Add meatballs into this sauce and turn it into a meatball pasta.
