Sticky Toffee Pudding (Single Serve Recipe For ONE)

Easy, simple and saucy this sticky toffee pudding recipe is going to be the only single serve dessert you need. It is so rich and comforting and happens to be eggless as well.

Equipment

  • Small mixing bowl
  • Rubber spatula
  • Chopping board & knife
  • 5 inch oven proof dish

Ingredients
  

  • 45 g medjool date pitted and chopped
  • 30 ml boiling water
  • 1/4 tsp baking soda
  • 1 tbsp brown sugar
  • 1/2 tsp vanilla
  • 1 tbsp honey
  • 2 tbsp flour
  • 1 tsp corn flour
  • 1/4 tsp cinnamon powder
  • 1/4 tsp salt

For the topping sauce:

  • 1 tbsp butter tiny cubes
  • 1 tbsp brown sugar
  • 3 tbsp boiling water

Instructions
 

  • Preheat the oven to 180℃, get a 5 inch oven proof dish and set aside.
  • In a mixing bowl add the chopped dates, baking soda and boiled hot water. The mixture should get foamy and puff up. Stir and let it soak for 3-5 minutes until the dates have softened up.
  • Add the brown sugar, honey, vanilla and stir. Add the dry ingredients and stir together using a rubber spatula.
  • Pour the batter into the ramekin. Top the batter with knobs of butter, brown sugar, hot water and bake for 12-14 minutes. The edges should be bubbling with sauce while the top should be dry to the touch and spongy.
  • Serve with a sprinkle of sea salt flakes.

Notes

  • Do not over bake the pudding as it meant to be gooey gooey and saucy at the bottom.
  • It is best served hot/warm.
