Strawberry Sorbet (no added sugar and vegan)

Fresh and fruity strawberry sorbet made with frozen strawberries, maple syrup and lemon juice. This frozen dessert is the perfect summer treat to cool you down. It happens to be vegan and has no added sugar with a little chopped dark chocolate it is give chocolate covered strawberry energy.

Equipment

  • Food processor
  • Rubber spatula
  • 9 inch loaf tin
  • Zip lock bag or Baking tray

Ingredients
  

  • 600 g strawberries fresh or frozen
  • 1 tbsp maple syrup
  • 1 tsp lemon juice
  • 1 tbsp vodka optional
  • Pinch of salt
  • 4 tbsp dark chocolate chopped

Instructions
 

  • If the strawberries are fresh make sure to freeze them on a tray or in a zip lock bag in the freezer for 3-5 hours or until solid.
  • In a food processor add the frozen strawberries, maple syrup, lemon juice, vodka, pinch of salt, and blend together. At first the mixture will get lumpy, then grainy. Stop the machine every now and then to scrape down the sides and blend again.
  • Once it is smooth and there are no pieces of fruit or lumps, transfer half the mixture to the tin and top with the chopped dark chocolate.
  • Layer on the remaining sorbet and spread it out evenly. Place in the freezer and serve as needed.

Notes

  • Make sure the strawberries are frozen solid before blending.
