Sugar Free Banana Bread Recipe

This is the best banana bread that is simple to make, fluffy, very delicious. But most importantly it is refined sugar free so the sweetness comes only from the bananas and dark chocolate.

Equipment

  • Mixing bowl
  • Fork
  • Whisk
  • Rubber spatula
  • 8 inch loaf tin
  • Baking paper

Ingredients

  • 4 large ripe bananas mashed
  • 1/2 cup greek yogurt
  • 1/4 cup melted butter
  • 2 eggs
  • 1 tbsp vanilla
  • 1 and 1/2 cup flour
  • 1 and 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon powder
  • 1/2 tsp salt
  • 1/2 cup dark chocolate chopped

Instructions

  • Preheat the oven to 170℃ and line an 8inch loaf tin with baking paper, set aside.
  • In a large mixing bowl, mash the ripe bananas until a puree.
  • Add the melted butter and whisk until combined. Add the eggs, greek yogurt and whisk well.
  • Add the flour, baking powder, baking soda, salt, cinnamon, chocolate chunks and whisk until combined.
  • Transfer to the lined baking tin, bake the banana bread for 45-50 minutes, or until a tooth pick inserted into the center comes out clean.
  • Allow it to cool a little before slicing. The top will have a crust while the bread is warm once it cools down the crust will get soft.

Notes

  • If the bananas are not ripe the bread will not be sweet. In which case you can add 1/4 th cup of honey or maple syrup.
  • I also like adding chopped walnuts and cashews into the banana bread batter.
  • To get that bakery style crack on the top of the loaf dip a knife in melted butter or oil and slid it across the center of the batter before baking.
