Warm Rice Salad

A festively spiced rice salad made with Palmini “rice”. This recipe is easy to make with leftover rice and is completely customizable, it is vegetarian and the perfect side dish to make this holiday season.

Ingredients
  

  • 2 cups rice I used Palmini rice
  • 1 cup bell peppers diced
  • 1 cup cucumbers diced
  • 1/2 cup tomatoes diced
  • 1/2 cup corn canned
  • 1/4 cup onions diced
  • 4 garlic cloves minced
  • 1 cup fresh herbs chopped parsley & mint
  • 1 clementine diced
  • 8 dates diced
  • 2 tbsp dried cranberries
  • 2 tbsp raisins
  • 1/4 cup walnuts diced

Flavourings -

  • 1 tbsp dried oregano
  • 1 tsp dried basil
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp orange juice
  • Salt & Pepper to taste

Instructions
 

  • Start by chopping all the ingredients for the salad.
  • Transfer them into a mixing bowl, add the fresh and dry herbs too.
  • Heat up the rice in a microwave and add it into the bowl.
  • Add the olive oil, lemon juice, pepper and salt. Toss together, transfer to a platter and serve.

Notes

  • You can use leftover rice to make this salad, or any other rice alternative to make it.
