These veggie packed bars are a simple but savory snack to make very easily and tastes delicious. Filled with assorted cheese and herbs – it is a yummy appetizer recipe to mix up.
This is a great recipe to introduce veggies into your kids diet. The bars taste delicious and honestly they are so simple to make. I also like using leftover veg form the fridge to make these bars. The beauty is the cheese, it is the carrier of yummy flavor into this recipe – I have used combination here but that is also because it is what I had leftover in my fridge. These bars are great for picnics, to have stored in your fridge for the week – so you can keep snacking on them. It doesn’t cost much to make them either and they are packed with so much flavor.
To make these bars we need veg, I have used broccoli, sweet corn, green chili, parsley and scallion, with garlic. To turn them into bars we need eggs, milk, yogurt, olive oil, flour, baking powder, dried oregano and basil. As for the cheese I have used a combination of feta, mozzarella and parmesan cheese. A little salt and pepper for seasoning is important.
To prepare the broccoli we need a food processor but you could use a knife and chopping board. To cook the mixture we need a sauté pan and rubber spatula. I have baked the mixture in a 9×9 in baking tin lined with baking paper.
Preheat the oven to 180 deg c and line a 9×9 inch tin with baking paper. In a food processor add the broccoli, scallion, green chili, garlic, parsley and pulse until it is coarse. In a sauté pan on low to medium heat add 2 tsp olive oil, the coarsely ground veg, sweet corn and potato. Cook for 3-5 minutes or until soft. Take off the heat and allow to cool. In a large mixing bowl add the eggs, milk, yogurt, olive oil and whisk until smooth. Add the flour, herbs and baking powder, whisk until smooth. Add the broccoli mixture, feta, mozzarella and fold together until combined. Pour into the lined tin, top with the parmesan cheese and bake for 28-30 minutes or until set and the top is golden. Allow it to cool completely before cutting into bars.
These bars are yummy cold or at room temperature. I would suggest serving it with herb cream cheese or labneh or better yet ketchup/hot sauce. Store the leftovers in an air tight container in the fridge for up to 6 days. When ready to eat, heat it in the microwave for 20-30 seconds.
