Chicken Caesar Lettuce Bites - low carb recipe in 5 minutes!

Crunchy and fresh lettuce cups made with a chicken caesar salad filling that has greek yogurt making it lighter and healthier. A simple, wholesome and delicious low carb cold appetizer for summer. 

I am not one to harp on savory recipes. So if I am sharing one, it must be absolutely delicious. But more importantly simple to prepare. This recipe is not only simple to make but also is inspired by the viral TikTok chopped salad sandwich videos. However since this is low carb I have used lettuce cups to serve the filling as opposed to bread. Don’t get me wrong I absolutely love my Chopped chicken caesar salad sandwich recipe but sometimes we want a quick appetizer to feed a crowd that takes 5 minutes to make. 

The trick to this recipes using your leftover chicken from the previous day. I have used shredded rotisserie chicken from yesterday which is perfect. But if you don’t have any leftover chicken and want to make this recipe, make sure to cook chicken breast or boneless chicken with salt and pepper in a little olive oil, let it cool before shredding and chopping. The recipe is inspired by the flavors of caesar salad hence we need a caesar dressing and I have used my homemade recipe but you can use your favorite caesar dressing. 

What are lettuce bites?

Lettuce bites are similar to lettuce cups which is basically lettuce leaves that have been washed and dried, filled with various fillings – like chicken mince lettuce cups, beef, prawns or in this case a caesar chicken salad. It is a low carb option to enjoy some of your favorite sandwich fillings, salads etc in a fun and delicious way. 

What is a caesar salad? What does a real caesar salad contain?

A caesar salad is a salad made of green salad leaves like romaine lettuce/ baby gem lettuce, croutons, parmesan cheese, lemon juice and a classic caesar salad dressing. The most commonly. Served caesar salad variation is a chicken caesar salad recipe which is the addition of grilled chicken with the salad and dressing. 

What is the origin of caesar salad? Why is it called caesar salad?

It is believed that the caesar salad was created by Julius Caesar himself. However there are documentations of it being recored in the early 1920s by Caesar Cardini – an Italian chef who owned a restaurant in Tijuana, Mexico. 

Is caesar salad actually healthy?

As the original caesar salad recipe consists of mayonnaise, loads of cheese, oil and high amounts of salt, it doesn’t make for the “healthiest” salad option on the menu, however the recipe we are making is healthier, lighter and extremely delicious – not to mention lower in calories too. 

What is the best lettuce for lettuce cups?

You can use any type of crunchy green leafy lettuce for lettuce wraps/cups, but popular types of lettuce include Boston bib lettuce, baby lettuce gems and romaine hearts. Baby cabbage leaves would also work great.

What ingredients do you need to make Chicken Caesar Lettuce Bites?

To make the chicken Caesar salad we need cooked rotisserie chicken or any leftover cooked chicken that is chopped, lettuce, greek yogurt, grated parmesan cheese, seasoning (salt, pepper, oregano) and a caesar salad dressing. I have used my homemade version which is greek yogurt based. I like serving this in baby lettuce gem leaves and a couple of croutons on top. 

What equipment do you need to make Chicken Caesar Lettuce Bites?

We need a knife to chop the chicken mixture. Serve this on a platter and enjoy it cold. 

How to make Chicken Caesar Lettuce Bites?

Separate the baby lettuce gem leaves, wash and let them dry. Set aside. To make the filling, chop the chicken and garlic with the parmesan, greek yogurt, seasonings until fine.Add the caesar salad dressing and chop again. Serve with the lettuce leaves, croutons and more dressing. You could add more cheese on top if needed. I like storing this filling in the fridge and allowing it to get cold before serving in the lettuce leaves

Storing these Chicken Caesar Lettuce Bites?

The leftover chicken caesar filling can be stored in an air tight container for up to 4 days. When ready to eat scoop into lettuce cups and enjoy. I prefer it fridge cold. Once the lettuce cups are filled with the chicken it will get soggy and not have the same texture hence you need to store the filling and the lettuce separately.

Ingredients
  

  • 2 cups cooked chicken
  • 1/4 cup parmesan cheese grated
  • 1 garlic clove
  • 2 tbsp greek yogurt
  • 1 tsp oregano
  • 1/2 tsp black pepper
  • Salt to taste
  • 1/4 cup caesar salad dressing *check notes*
  • 2 baby lettuce gems
  • 1/2 cup croutons

Instructions
 

  • Separate the baby lettuce gem leaves, wash and let them dry. Set aside.
  • To make the filling, chop the chicken and garlic with the parmesan, greek yogurt, seasonings until fine.
  • Add the caesar salad dressing and chop again.
  • Serve with the lettuce leaves, croutons and more dressing. You could add more cheese on top if needed.

Notes

  • *Homemade caesar salad dressing recipe*
  • I like storing this filling in the fridge and allowing it to get cold before serving in the lettuce leaves
  • If you like a little heat add chili flakes that are toasted on the pan
  • If you don’t have baby lettuce gems, you can use any the smallest lettuce head
    Swap the croutons with toasted nuts to keep this recipe gluten free
