Chicken Caesar Salad Pizza (VIRAL high protein TikTok recipe)

This healthy high protein and low carb pizza is so good and the base is made with shredded rotisserie chicken, topped with caesar salad dressing, crunchy lettuce, parmesan cheese and croutons.

This recipe was trending all over social media and at first I thought to myself there is no way I am going to try this recipe. As a true pizza lover it seemed only fitting to not give this recipe a go since we do not use bread as the dough base but chicken instead which seemed like a scam. But then my curiosity got the better of me. I looked at many recipes for inspiration and the first one I saw was Kale Junkie’s video which was so appetizing. I then went down a rabbit hole of cooked chicken, rotisserie chicken, canned chicken and chicken mince before coming to my favorite base. 

There are a few points to keep in mind when making this recipe as it can taste like cardboard or really dry and no appetizing. However I have given you some tips on getting it perfect every single time. You can use any additional toppings as you like and use my homemade caesar salad dressing recipe to make this recipe even more healthy and wholesome. This healthy high protein and low carb recipe is perfect for those who are looking to add a fun meal into their day which is not boring, so let us understand more about it.

Chicken caesar salad pizza is basically pizza made without bread and a chicken base instead. Topped with a Caesar salad dressing and lettuce leaves. Garnish with more dressing, parmesan cheese and croutons to complete the authentic flavors of a traditional caesar salad recipe.

A caesar salad is a salad made of green salad leaves like romaine lettuce/ baby gem lettuce, croutons, parmesan cheese, lemon juice and a classic caesar salad dressing. The most commonly. Served caesar salad variation is a chicken caesar salad recipe which is the addition of grilled chicken with the salad and dressing. 

What is the origin of caesar salad? Why is it called caesar salad?

It is believed that the caesar salad was created by Julius Caesar himself. However there are documentations of it being recored in the early 1920s by Caesar Cardini – an Italian chef who owned a restaurant in Tijuana, Mexico. 

What is caesar sauce made of? What is the original caesar dressing made of?

Authentically Caesar salad dressing is made of coddled eggs, olive oil, mayonnaise, anchovies, salt, pepper, parmesan cheese, Italian herbs and lemon juice. This has changed over the years for chefs/restaurants to use a whole raw egg/egg yolk, mustard, assorted herbs etc in their dressing. Obviously you can find eggless versions which could be vegan as well. I have made an easier caesar salad dressing recipe that is lighter and healthier for you with Greek yogurt, anchovies, herbs, lemon juice, garlic, parmesan cheese, olive oil and seasoning. 

What ingredients do you need to make chicken caesar salad pizza?

Base –

I have used rotisserie chicken which I always have leftover in my fridge. You can alternatively use roast chicken from your Sunday roast. We also need parmesan cheese, eggs, garlic and seasoning such as dried oregano, salt and pepper. You can use canned cooked chicken, leftover shredded chicken breast or Sunday roast chicken. 

Sauce –

I used my homemade caesar salad dressing recipe which is simple and delicious. You can check out the recipe here.

Topping –

Baby gem lettuce or any lettuce. Croutons or toasted pieces of bread/crispy nuts. I have used parmesan shavings but you can use grated parmesan cheese as well.

What equipment do you need to make chicken caesar salad pizza?

To make the base I have used a food processor, baking tray lined with baking paper and an oven to bake it. A knife to chop the lettuce leaves and a peeler to shave off the parmesan cheese block.

How to make a chicken caesar salad pizza?

Preheat the oven to 180℃, line a baking tray with baking paper. To make the base add the ingredients in a processor blend until smooth. Divide the mixture into two parts and transfer one part to the lined baking tray. Create a 8-9 inch diameter round and smooth it out with a rubber spatula. Bake for 12-15 minutes until the top is dry and the sides are golden. While the base is baking, toss the chopped lettuce with the caesar salad dressing. Once the base is baked, top with a couple dollops of the caesar salad dressing, then the tossed lettuce. Finish with parmesan shavings, croutons, lemon wedges and olive oil. Cut into quarters and repeat the process with the other half of the pizza base. 

Serving chicken caesar salad pizza?

This is best served warm with more salad dressing on the pizza. But I also like the lettuce cold  topped on the baked chicken pizza. If you don’t want to add the croutons to keep it gluten free you can use toasted nuts or crispy chickpeas as well. I also like adding more parmesan cheese on top and serve it with lemon wedges and olive oil.

Ingredients
  

Base

  • 500 gm rotisserie chicken shredded
  • 1/2 cup parmesan cheese
  • 2 eggs
  • 2 cloves garlic
  • 1 tsp olive oil
  • Seasonings - dried oregano salt and pepper

Salad

  • 4-5 tbsp Caesar salad dressing check note
  • 2 heads baby gem lettuce
  • 1/4 cup parmesan cheese shaved
  • 1/4 cup croutons

Garnish

  • Lemon wedges
  • Olive oil

Instructions
 

  • Preheat the oven to 180℃, line a baking tray with baking paper.

Base -

  • To make the base add the ingredients in a processor blend until smooth.
  • Divide the mixture into two parts and transfer one part to the lined baking tray. Create a 8-9 inch diameter round and smooth it out with a rubber spatula.
  • Bake for 12-15 minutes until the top is dry and the sides are golden.

Assembly -

  • While the base is baking, toss the chopped lettuce with the caesar salad dressing.
  • Once the base is baked, top with a couple dollops of the caesar salad dressing, then the tossed lettuce.
  • Finish with parmesan shavings, croutons, lemon wedges and olive oil. Cut into quarters and repeat the process with the other half of the pizza base.

Notes

  • Do not over bake the chicken base or else it will get dry.
  • If you have a larger oven you can bake both the pizza bases at the same time.
  • Alternatively you can bake one large pizza base around 14 inches and bake it for a few minutes longer, until the edges are golden and the top is dry to the touch.
