These blondies are like cookie bars but so much better. They are soft, chewy, crunchy and packed with easter chocolate including mini cream eggs. Such as simple dessert to bake for the season.
I love a good blondie. Especially when you know you only need butter, sugar, eggs, flour, vanilla to make it. Literally that all you need. However, a good blonde also has some chocolate in it, you can also add nuts. I have swapped the chocolate in the blondies for walnuts instead as the only chocolate going into these blondies are going to be on top and they will easter themed. I have used a combination of smarties, creme eggs, mini chocolate eggs and maltesers. They are so simple to make but trust me when I say they are so so so delicious!
Blondies are considered to be brownies sans the chocolate and cocoa powder. They are mean to be lighter, simpler and easy to bake but also very delicious to eat. However blondies are elegant and very yummy if made correctly, add your favorite nuts, chocolate chips or any other add ons and it makes for a quick and east dessert bar.
Eater blondies are basically blondies but turned into an easter themed dessert. Its a simple and genius way of making a fun sweet treat recipe that can feed a crowd. Very delicious and perfect for kids as well, you could leave out the nuts to keep these nut friendly. The chocolate in the blondies makes for a rich dessert bar. I would suggest using easter themed chocolate or get creative with your favorite candy bars.
To make these blondies we need melted or browned butter. The browned butter flavor is superior to any other flavor so I would always recommend that step. We need brown sugar in this recipe and there is no substitute here. When making recipes with minimal ingredients the chances are you will not have the option to use many substitutes if you want the same outcome. The brown sugar keeps these blondies chewy and fudgy while still having a crust on the outside. We need an egg and vanilla. We need flour, salt and walnuts as well. You could use a gluten free flour cup of cup measure.
The best part: the blondies are finished with a lot of assorted easter chocolate such as smarties, Maltesers, Cadbury creme eggs, mini chocolate eggs. I have used them to create little bunnies, carrots and eggs making it an easter themed blondie. You could add some chocolate into the batter as well and bake it with the blondie but I prefer it like this.
We need a large mixing bowl, whisk and rubber spatula to make the blondie batter. If you are browning the butter then you will need a sauce pot to do that step ahead. I like to toast my walnuts before chopping them which needs a sauté pan. You will need a knife and chopping board to cut the nuts. They are baked in a 9×10 inch tray but you can bake them in an 8×8 inch as well, lined with baking paper.
In a bowl add the browned/melted butter, brown sugar and whisk until smooth. Add the eggs, vanilla and whisk again, this time for a couple of minutes until pale and creamy. Add the flour, salt, walnuts and switch to a spatula, fold together until combined. Transfer to the baking tray and bake for 25 mins but I would check them after the 20 min mark. If a tooth pick inserted into the center comes out with damp crumbs then you can take it out of the oven. If it has raw batter on it, bake it for an additional 5 minutes.
Once out of the oven, stud the top with an assortment of easter candy, get creative and make a few easter bunnies or carrots etc. Cut into squares, finish with flakey sea salt and serve with a glass of milk, coffee or even a cup of tea. These blondies are delicious on their own but you could also serve it with a scoop of ice cream on top. this could be vanilla, coffee or almond ice cream as well. These keep well for 3-4 days in an air tight container at room temperature. I would not recommend storing them longer as they will get hard. Also you could crumble them up and enjoy them with ice cream.
