Chewy, fudgy and zesty. These lemon blondie bars are so fresh and delicious. They are very simple to and need only 5 ingredients to make and its ready in 20 mins. A quick sweet treat dessert bar that is easy and yummy.
This recipe is a doubled up version of my Lemon Blondie Bar recipe that went absolutely viral online, first it went viral on TikTok with over 3 million views and then on instagram with over 1.7 million views. But this recipe has been liked over 30K times, it has been saved over 35K times, with close to 25K comments and approximately 10K shares – there is something about this recipe that hit the spot with so many of you. Not to mention it increased my followers by over 10K in under 1 week. Having said that, this recipe is literally 5 ingredients and needs only 20 minutes to make. Which is why you lot love it so much.
It only seemed fitting for me to make a double batch that feeds a larger crowd but also keep enough leftovers for the next day. The beauty about this recipe is also the fact that you can keep the bars fudgy and chewy by under baking them or you could bake them entirely for a more cakey texture. They are delicious warm out of the oven or cooled down as well. The glaze might seem unnecessary but believe me it makes a difference and do not skip on it. So let us get to the recipe.
Blondies are basically a type of desert bar that is flavored with vanilla extract and brown sugar to give it that lovely chewy texture but also a very nice sugary caramel flavor. The difference between a Blondie and brownie is that Blondies don’t have dark or milk chocolate in it you could find white chocolate in a Blondie however brownies always have chocolate and cocoa powder. They are both bar deserts that are usually cut into squares after baking and cooling. The beauty about Blondies are that you don’t need any fancy equipment, all ingredients to prepare the recipe are simple, it comes together fairly easily and it also bakes up in little to no time.
These are lemon Blondies which means they are Blondies that are flavored with lemons, in this case fresh lemons using lemon juice and lemon zest I have not used any white chocolate in this recipe but I do glaze the Blondies with a lemon icing which is just lemon juice and icing sugar that’s been mixed together which creates a delicious sugary crust on top once the icing sets.
We need fresh lemons to make this recipe. We are using the zest and juice to make this recipe. We also need a dewdrops of lemon juice in the glaze as well. I would only recommend using fresh lemons to make this recipe, if you don’t have them you can make lime blondies as well and they are delicious! But use fresh limes.
We rub the lemon zest and castor sugar together until it is a pale yellow color. You can use granulated sugar as well. This blonde recipe doesn’t use brown sugar like most blondie recipes as we want to keep the color yellow and avoid that brown caramel color.
I have used salted butter in this recipe so I didn’t use additional salt in the batter. We need melted butter in this recipe but you could use browned butter as well. I would recommend using melted butter and not oil as it changes the structure of the brownie once it bakes. You could use a dairy free butter to keep this lactose free.
The recipe calls for a whole egg, you could use a flaxseed egg in this recipe as well.
All purpose flour, maida, cake flour all work well in this recipe. If you want to make this recipe gluten free you can use a gluten free flour mix cup for cup measure.
We need a little icing sugar to make the lemon glaze for the blondies on top. This is optional but it really does add more lemon into the blondie and a delicious sugary crunch.
To mix the Blondie batter I use a mixing bowl and a rubber spatula, we do need to use our hands to rub the sugar and lemon zest together in the beginning of the recipe as this helps transfer the beautiful lemon flavor into the Blondie. I like to bake the Blondie in a loaf tin ideally an 8” loaf tin which is lined with baking paper. Once it is baked, let it cool on a wire rack and mix the glaze ingredients in a small bowl with a spoon.
Preheat the oven to 180 deg c, line an 8×8 inch square tin with melted butter and baking paper. In a bowl add the castor sugar and lemon zest, rub together. Add melted butter and stir. Add egg and stir. Add flour, lemon juice and stir. Optional: add a pinch of salt. Transfer to the tin and bake for 12 mins. Mix the glaze ingredients together until smooth and pour over the warm lemon Blondies. Let them set and cut into squares.
Once the Blondies are baked, glazed and sliced you can store them in air tight container at room temperature for 3 days, as it has fresh lemon juice and lemon zest in the Blondie I wouldn’t recommend storing it longer at room temperature if you are going to be storing it longer than this period of time it is better to store it in the fridge for up to 7 days. If you know that you are traveling with it I would recommend storing it in an air tight container in the freezer for up to 1 month, travel with them frozen. When ready to serve let it come to room temperature before you serve it. The icing might get a little soggy if you freeze it or refrigerate it for a long period of time.
