Chewy, fudgy and delicious these magic cookie bars only need 6 main ingredients and come together in the baking tray itself! It is very simple to make and a quick and easy sweet treat to make.
When I first saw these magic cookies online I was so intrigued as it seemed like it was not possible. How could it be that the cookies didn’t need butter, sugar, eggs, flour? So I wanted to test it out and I was absolutely BLOWN away with the results. The condensed milk makes these cookies so soft, chewy and delicious! They are a coconut and chocolate lovers dream dessert. They are even better the next day and store well in air tight containers at room temperature.
If you needed a simple pick me up sweet treat baking project then this is the only recipe you need. It is not seasonal and works all through the year regardless. There are some recipes which have immunity and this is one of them – immunity where they can be baked all through the year, for any occasion and at any time with no fuss or hassle. You do not need fancy ingredients and certainly no major equipment as well. So let us get to it.
Magic cookies are basically a combination of chocolate chips, shredded coconut, oats and cashews that are stirred together with condensed milk to make a stick batter to create a chewy and fudgy cookie once baked. They were originally created by a condensed milk company as it uses a whole can of condensed milk to make. In many ways this recipe is so easy and simple to prepare as the bars don’t require you to mix the batter or baked on a tray in batches etc. it layers the ingredients into the tray and it baked directly. They really are perfect for a beginner to get into baking.
To make these bars we need butter, instant oats, dark chocolate chips, sweetened shredded coconut, roasted cashews, condensed milk, sea salt flakes. I like adding a little vanilla and almond extract but this is optional.
Replace the butter and condensed milk with a vegan butter and condensed milk. The recipe will work just the same.
The beauty about these dessert bars is that you do not need any fancy equipment to make it. We bake these bars in an 8×8 inch square tin that is lined with baking paper. They are baked in the oven and need to be chilled in the fridge until they are set after which it is cut with a sharp knife.
Preheat the oven to 175 deg C and line an 8×8 inch square tin with baking paper making sure the paper is coming the sides on all four corners, set aside. Pour in the melted butter, add the vanilla, almond extract (if you are adding them) and stir around with a spoon. Sprinkle over the oats in an even layer, add the shredded coconut, the chocolate chips, cashew nuts and pour over the condensed milk. Bake for 25-30 minutes or until the top is bubbling and just set. Let them cool completely before cutting into squares and serving.
These are best served with black coffee but you could totally serve them with milk or just on its own as well. They can be stored in air tight containers at room temperature for up to 1 week. If you are storing them longer, place them in the fridge but I prefer eating them at room temperature.
