Fluffy and soft bakery style chocolate muffins that are eggless, jumbo sized and very delicious. It is a single serve recipe that is ready in under 30 minutes! It has a rich chocolate flavor with a molten ganache center.
This is my take on the deliciously VIRAL Olympic Chocolate Muffins with a molten chocolate center. It is an eggless recipe but very simple and so easy to mix together and they happen to be a single serve recipe. Now, whether you follow the 2024 Paris Olympics or not, these Olympic Village Chocolate Muffins would’ve popped up on your feed at some point on social media over the last couple of weeks all thanks to the Norwegian swimmer Henrik Christansen. I tried my hand to make my own dupe for these viral olympic chocolate muffins recipe which you can check out here.
It is a tall, bakery style chocolate muffin filled with an intense chocolate flavor that comes from dutch processed cocoa powder, chocolate chips and a dark chocolate ganache filled with a molten center. It is fluffy on the inside, gooey, soft and delicious – and if you are a dark chocolate lover (like I am) then this is the ONLY single serve chocolate muffin recipe you will need. I must admit you can get 2 muffins out of this recipe but I like one GIANT jumbo muffin instead.
The 3x olympic swimmer from Norway Henrik Christiansen had posted about the double chocolate muffins from the olympic village over a dozen times, and the social world is eating it up, quite literally. Since then tiktok creators such as Chef Danielle Sepsy, has made her version with a packet of Jell-O pudding mix which in her opinion matches the Olympic muffin’s rich flavor. However Jordan Howlett (@Jordan_The_Stallion8), suggests he made 4 phone calls to track down the official recipe, as he explains, includes a delicious ganache filling created with heavy cream. While, Kassie of @ibakemistakes suggests that freezing the muffins is key to nailing the exact texture. Sarah of @bromabakery makes a straight forward chocolate muffin filled with an indulgent ganache center and proclaims she would have a medal for baking at the Olympics.
I did some research and I found that these chocolate muffins are most likely coming from this French food supplier called: Coup de Pates. They are tall bakery style chocolate muffins that are dark, indulgent and intensely flavored with chocolate. The muffin itself is soft, fluffy and very tender, however what makes them stand out is the molten chocolate ganache center that is gooey and delicious.
After the Norwegian swimmer Henrik Christansen posted about these chocolate muffins on tiktok, not once but over a dozen times – it was only a matter of time before the world caught on to this delicious baked good. Making everyone crave these muffins from all over the world, leading to many versions. They have been talked about on tv as well, People have covered the story, Pop sugar has had their take on the hype as well as the Today show.
Single serve recipes are those that serve 1-2 people. They are usually measured in smaller amounts, use fewer ingredients and takes up lesser time to make. I have a list of single serve recipes that are very easy to make and approachable, make sure to check them out.
To make the muffin we need butter, oil, brown sugar, castor sugar, greek yogurt, vanilla, instant coffee, milk, flour, dutch processed cocoa powder, salt, baking powder, baking soda, chocolate chips. To make the ganache I use some leftover milk and dark chocolate with heavy cream, salt and honey.
A mixing bowl is needed to mix the batter together with a rubber spatula and whisk. I have baked the muffin in a cupcake tray lined with baking paper. The molten ganache is made in a small bowl, the cream is heated in the microwave until hot before the chocolate is added into the hot cream.
Preheat the oven to 425℉ and line one cupcake with baking paper, as these are large muffins we need to ensure the lining is that of a muffin and not cupcake. In a small mixing bowl add the melted butter, oil, instant coffee and whisk until smooth. Add the vanilla, brown sugar, castor sugar and whisk. Add the yogurt, milk and whisk until smooth. Add the dry ingredients (flour, cocoa powder, baking powder, baking soda, salt) and stir together until smooth. Add the chocolate chips and stir well. Pour into the lined muffin case and top with a few more chocolate chips. Bake at 425℉ for 5 minutes and then bake at 375℉ for 14 minutes on until a tooth pick inserted into the center comes out clean. While this is getting baked, let us make the ganache, in a bowl add the heavy cream in the microwave and heat for 30 seconds or until hot. Add the chocolate chips, honey and salt into the hot cream and stir together until smooth. Once the muffin is baked, allow them to a cool a little. Then make a cavity in the center and fill the ganache into the center. Enjoy it warm.
The unique point about these muffins is the chocolate ganache filled center and that is the bets way to serve the muffin but I would suggest enjoying it warm out of the oven as the top is crunchy and the inside is fluffy and soft. I love it with a glass of cold milk as well. My mum preferred it with vanilla ice cream.
Single serve recipes are such that you most likely will not have any leftovers but incase you do then this muffin gets better every day. Store it at room temperature in an air tight container for 2-3 days or in the fridge for up to 1 week.
